Oh, if I made the bread now there is no way it would last long enough to go in the freezer!
I'm just a bit of a wreck at the moment and waiting till I feel a bit better to tackle it. Am ALWAYS well enough to eat it though! :EasterBun

I'm a lurker, but visit regularly. This the first time I have opened a thread.So please be gentle.
This is the receipe I have for banana bread. It cmae from the forum and is really great.I now want to use it with 1lb loaf tins but do not know how to alter the cooking times.Would someone please help.
BANANA BREAD
INGEDIENCE.
4oz butter or margarine
6oz sugar
8oz self raising flour
2 eggs
2 large or 3 medium, very ripe bananas
METHOD.
Heat the oven to gas mark 4/180C.
Grease a 2lb loaf tin.
Mash the bananas with a sturdy fork.
Cream the butter and sugar together and mix in the eggs.
Mix together the two yellow sludges you now have.
Mix in the flour.
Scrape into the loaf tin and bake for 40 minutes then lower the temperature to gas mark 2; 150C and cook for a further 30 minutes.
Let it cool turned out on a rack.

I'd cook at the higher temp for 25 mins, then at the lower one for 15 and then check. I'd then guage how much longer it might need. I'd also make a note of what I actually did, for next timeMaybe on here, too, so as to help others in the future

This is the recipe I quoted from Nibblous a couple of years ago. I don't bake on two temperatures, but for my fan I do at about 160. I would just cook for a bit less time and then put a skewer or similar in and see if it is cooked. It is the best recipe! Although I realise now that you asked this question in Nov.! No doubt you have sussed it by now!0 -
I have never made muffins before ( would probably like to add some sultanas as well). What an admission, so I want them to be right.
Which is the reciept that produces the best results.
Advice needed please. Thank you.
