hi there i am wanting to make a lil food hamper for a friend of mine who lives away from home and mainly lives on takeouts due to long hours at work :think: i thought it would be nice....anyway...so far i have made mixed fruit jam, red onion chutney and going to make smartie biscuits. His favourite fruit however is bananas and i wanted to add it into the hamper some how and then i thought BANANA BREAD!

i think i should probably make it very close to christmas as most breads i make in the breadmaker dont really last that long any ideas how i should store it to keep as fresh as possible, or is wrapping it in foil and sticking it in the basket gonna be okay?

I would wrap it in greaseproof paper and then foil, or failing that do you have a small tuppaware box you dont need or could recycyle?0

In my house, about ten minutes
I normally double up my recipe and bake two, wrap in said greaseproof and foil, and then freeze one. Then the little beggars can't find it for a while. It freezes very well, so if you want to make it in advance and freeze, you could then just whip it out if the freezer the day you give the hamper. In my experience, it will keep without going mouldy for about four or five days max., but as I say, never lasts long in our house.

I agree with Rowsew - It will look better in the greaseproof paper too. Banana bread still tastes good when it has been frozen.

I make banana bread on a Sunday, store it in a clip fresh box and its still fine for pack lunches on Friday.
