What a lovely idea! Nothing to add re storage, but when I make banana bread, I add a handful of sultanas, soaked overnight in rum (just put them with the rum in a little saucepan, and very gently heat it, then let it cool down. It plumps them up and adds another layer of flavour).... even more yummy IMO. Good wishes, the cake.0

Yes, I have looked at the mega index but all the recipes are so different I'm not sure which to use!
I want a simple recipe. I have one that wants lemon zest but I'd prefer not to zest fruit as I never know what to do with the poor fruit afterwards!
I just want a nice moist banana loaf I can cook in my 2lb/2pint loaf tin or make up as muffins if the mood takes me.

250g plain flour
1 teaspoon bicarbonate of soda
pinch salt
115g butter
115g dark brown soft sugar
2 eggs, beaten
500g mashed over-ripe bananas
Prep: 15 mins | Cook: 1 hour 5 mins
1. Preheat the oven to 180 C / Gas mark 4. Lightly grease a 23x13cm loaf tin.
2. In a large bowl, combine flour, bicarbonate of soda and salt.
3. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour mxture into prepared loaf tin.
4. Bake in preheated oven for 60 to 65 minutes, until a knife inserted into centre of the loaf comes out clean. Leave to cool in tin for 10 minutes, then turn out onto a wire cooling rack.0 -
I use a Rose Elliott one. It's mega super easy and really tasty. It's vegan if you are interested (well I do the vegan version - she has a recipe with an egg in it but you don't need it)
For a 2lb loaf tin
4oz butter or marg
4oz brown sugar (dark or light whichever you prefer)
6oz syrup
1lb self-raising flour
2 tsp baking powder
4oz chopped walnuts (leave out if you prefer)
4 bananas, mashed
4 tbs milk
Grease and line a 2lb loaf tin. Melt the marg, sugar and syrup, then leave to cool until you can hold your hand against the pan.
Preheat oven to 160c. Sieve flour and baking powder into a bowl, then add the nuts, bananas and melted mixture. Mix well, then pour into the tin and bake for 1 1/4 hours.
If you want to use eggs then use two eggs and don't use the milk or the extra baking powder.
I usually make this in my 10" x 8" tin and bake it at 180c for 40 minutes.
The original recipe is half these quantities for a 1 lb loaf tin, so with much trial and error I've had to change temperature and timings for different quantities and size of tin, so 160c for 1 1/4 should be right if you do the 2lb loaf.
It's also delicious if you use 8oz chopped dates instead of the banana and extra milk - about 6 tbs.0 -

saverholic - Is the weight of the bananas in skins or nout of them?
justamum - Is the syrup golden syrup? Its out of the skins but I tend to just chuck a few whole bananas on the scales and as long as its roughly about the weight it works. I go over rather than under. Its pretty versatile though I've done it with bananas from about 400-600+ and its worked. If I've got them in I sometimes chuck in nuts, choc chips etc.
It also cooks really well as 'mini loaves' and it freezes if you want to batch bake0 -
