Just wanted to let you know of a variation on the cub-based recipe in here that I've recently tried out and love!
Instead of the fruit, mash up 2 bananas and had a handful of nuts if you want (flaked almonds are brilliant). Then reduce the amount of tea and sugar to about 3/4 cup of each to allow for the moisture and sugar in the bananas.
Hey presto, a banana bread that will stay delicious for a week. We make one or two on a Sunday evening and then have it buttered every morning for a week as breakfast. Delicious!0 -
To make a tea loaf a bit more special, for visitors perhaps, I decorate the top with rows of halved walnuts, cherries, dried apricots etc. I like the banana loaf idea (though not atm as I'm doing the Weight Loss the OS Way), it could be decorated with chipped dried 'nanas, maybe0
