I have this recipe (by Mary Berry):
175g currants
175g sultanas
225g light muscovado sugar
300ml strong hot tea
275g SR flour
1 large beaten egg
Measure fruit and sugar into a bowl, pour over the hot tea, cover and leave overnight.
Pre-heat oven to 150c.Lightly grease a 900g loaf tin and line base.
Stir the flour and egg into the fruit mixture, mix thoroughly, then turn into prepared tin and level surface.
Bake in pre-heated oven for about 90 minutes,or until well risen and firm to touch.Leave to cool in tin for 10 minutes, then turn out,and let cool on a wire rack.Serve sliced and buttered.
It's a lovely recipe,HTH.
The OH is Diabetic and she makes this without the sugar but with extra dried fruit.
I can recommend it.I used to be indecisive but now I am not sure.0 -
I like the following recipe for 'Plum Bread', which is best served sliced & buttered! (Again this is using the cold tea method).

I have the yummiest and easiest tea loaf reciepe of them all.
1 cup tea, hot cold doesn't matter
1 cup currants
1 cup sugar
2 cups sr flour
Soak currants in tea until cold if hot tea or a couple of hours. Mix with everything else and pour into a lined 2lb loaf tin bake for 55-60 mins at 180c
Leave to cool and serve in thick slices with lashings of butter, although tastes fab without! Keeps well.Sealed pot challenge member no 1057
No toiletries in 2011, well shampoo, toothpaste or deodurant!0 -
Hi Grumswifie, is this an egg free recipe? (The only reason I ask is that all the recipes I found so far included eggs).
Thanks in anticipation.grumswifie wrote: »I have the yummiest and easiest tea loaf reciepe of them all.

Hi again
Yes, no egg in it. Pretty easy compared to some of the other ones don't you think? I was given this by a lady at a toddler group about 9 years ago and it was called Sophies mums currant loaf. My youngest who is 5 is called Sophie, I have a feeling she may have been called after this cake, hee hee:rotfl:Sealed pot challenge member no 1057

Thank you for this, just checked and I have all the ingredients - just wish I wasn't going out for the day tomorrow as I can't wait to try it!0 -
Hello
I recently saw a recipe for tea bread/loaf on the forum, with the ingredients measured in cups.
I have searched and for the life of me I cannot find it again (although I have doubtless overlooked it about a million times as I have scrolled through!)
Can anyone point me in the right direction?
Thank you!:D0
