  • Made a pizza for tea and have some pineapple rings left over. Really fancy a pineapple upside down cake but as I already have lots of baking done -hobnobs, lemon cake, muffins, won't all get eaten whilst fresh so just wondered if I could freeze it? Many thanks.
    I'm not a failure if I don't make it, I'm a success because I :tried!

    I'm only guessing this - but I can't see why not if other cakes freeze ok. Would be intersted to see others input though as I've never had pineapple upside down cake and am unsure if the pineapple would make the sponge soggy

    But generally cakes freeze well !

  • Hi, I'm try to use up or freeze leftovers as much as possible but I need to know if it is ok to freeze these little odds and ends...

    pesto. I get a small jar to make risotto, use half, and then the other half gets wasted as we don't use it up in time (only eat it in risotto and don't want one that often). Can I freeze what's left?

    cream? there's only 2 of us and we only have about half a small pot. Can I freeze what's left?

    white wine? only me drinks it, don't always finish the bottle, always intend to cook with the rest but don't until it ends up like vinegar. Can I freeze in ice cube trays to bung in dishes?

    Freezing wine in ice cubes/little bottles for cooking is good, you could also freeze pesto in ice cube trays.

  • I have been a freezer kid for over 34 years. Cooking for 1 these days. 150 L freezer is nearly full. Everything is homemade.
    - Soups and portion them in plastic drink cups. & freeze
    - Stews or casseroles – use muffin tins for portion sizes or the cups & freeze
    (thaw slightly remove from cup and heat in microwave, wash cup up and re-use next time I cook)
    - Quiche
    - Meat pies or potato pies
    - Fried rice in large quantities ( under cook rice a little so it doesn’t go soggy) Paella never work for me
    - Mince base fry up onion and garlic with it cook well cool and freeze
    - Homemade baby foods in iceblock trays for portions
    - left over Baked beans or tinned spaghetti frozen. A can is too much for me.
    - Vegetarian meals eg. Chickpeas and rice, etc
    - Cooked beans eg barlotti or chick peas
    - Cooked porridge in serves
    - Yoghurts the kids ones, bung them in the freezer, eat while frozen. YUMMO!
    - Bananas when they are nice and ripe freeze to eat as iceblocks or to use in cakes.
    - Mangos make nice iceblocks too
    - Onions freeze ok, but seem to go sweet after a while, but still ok.
    - Baked vegies and then stored in snap bag.(egg plant, pumpkin, onions, carrots, potatoes etc)
    - Carrots, pumpkin, sweet potato blanched in the microwave, cooled then frozen. These carrots are so sweet.
    - Uncooked frozen celery, spring onions, parsley, mushrooms, snow peas, capsicums, chilli, only suitable for cooking
    - Cheese and bacon rolls
    - Cheddar Cheese, motz, fetta
    - Cooked rice to have with meals
    - Cakes and biscuits. Even prepare biscuit ingredients and put that in the freezer.
    - Large quantities of biscuits mix rolled them into logs and freeze till ready to bake.
    - Bottles filled with water to take fishing instead of buying ice and you can drink it too.
    - Flour, Milk powder, cereals, pasta and other dried goods to keep the bugs out of them.
    - Margarine, Copha, not sure how butter freezes,
    - Cream it separated but still ok to use in sauces
    - Fruit juice, gravy, wine. You can buy these iceblock bags from Coles in Australia.
    - Eggwhites
    - Meat knobs eg devon, sliced meats, If meat is wet, put on paper towel, it is still ok.
    - Wraps can be prepared with meat bases on them and frozen, to use microwave then add salad afterwards
    - Fresh live stock as long as it is bled well and hung to drain, cooled, portioned and frozen as soon as possible
    - Fresh fish washed clean, gutted, blood along back bone scraped out rinsed, dried, filleted then frozen as soon as possible.
    - Tomatoes straight from the garden if too many, only for casseroles and stews.

    Blanched vegies can be done in the microwave by peeling rinsing drain, the water on the vegies is usually enough, but can add 1-2 tsp of water. eg. carrots 4mins / 500g put in a freezer bag with holes in it, in a dish and cook, cool quickly and freeze. Taste lovely & sweet.

    Deep freezers are a lot colder than your normal fridge freezer. Your freezer booklet should give times for keeping foods, but this is only an estimate. Cooked food does keep longer.

    Keep the big freezer as storage so you don’t keep going into it. Less defrosting. Use the fridge freezer for items used all the time. Buy a fridge / freezer thermometer to keep an eye on the temp.

    Last thing keep the bread at the top in the freezer, it will thaw out faster if freezer breaks down and give you ample warning. Chest freezers seems to stay colder longer when this happens. Doesn’t happen very often.

    Buy a product by ‘GLAD’ called GO BETWEEN. It is plastic on a roll not sticky like plastic wrap, made to go between slices of food / meat in the freezer you won’t have to partly thaw meats out. It doesn’t stick to the food.

    Using freezer bags or resealable bags takes up less room than plastic containers.

    NEVER PUT HOT FOOD IN FRIDGE OR FREEZE allow to cool first.
