Tinned pineapple questions and ideas

Hi,

Today I made semi home made pizza .,... bought the base put bolonese sauce, mixture of toppings and mozzerella on it ... it was not bad but I think it needs some real practice ( currently its edible but I wouldn't serve it to someone I liked!!!!)

But my real problem is I made a sort of salad with t he extra's from most of the toppings, but I bought a tin of pineapple chunks and used about 1/10 of the tin ....

Does anyone have any idea's of anything I could use the pineapple up in ... it seems a real waste just to throw it out

    Hi littlekitten,

    If it was me I'd just eat them either on their own or with ice cream. What about using them for a smoothie?

    my mum used to make a yummy pineapple triffle:

    layer crushed biscuits (preferably treacle crunch or ameretto) and tinned pineapple, top with whipped double cream and finish with a crumbled cadburys flake.

    so easy but blooming delicious :D
    - prior planning prevents poor performance!

    Works well in Creole or mild Indian sauces.

    Topping for microwaved sponge pudding. Yum and only takes 5 mins rom thinking about it to serving!

    50g sugar
    50g soft butter
    1 egg
    50 g SF flour
    1 tablespoon juice or milk
    1/2 teaspoon baking powder

    put everything in bowl and mix well for 2 mins until smooth
    place topping eg, pineapple or apple or dried fruit or syrup etc in a basin
    put mixture on top
    cover with cling film loosely so it wont touch
    microwave for two minutes
    turn out upside down onto a plate
    Love living in a village in the country side
  • You could freeze them and use them instead of ice cubes in drinks (or just store them frozen until the next time you want to make pizza), or put them on cocktail sticks with chunks of cheese as snacks.

    my mum's recipe... stir fry pineapple chunks with thinly sliced celery! :-) try it, its yummy... I normally season it with a little oyster sauce and ground white pepper

    Make a pineapple cobbler type cake. I would make a sponge mixture, layer the pineapple at the bottom of a deep dish dish, pop cake mixture on top and serve with custard when cooked.

    Theres a fruit cobbler recepie here somewhere which you could use pineapple in.

    Make a fudge sauce and serve with icecream.

    Can I?

    Bought a catering size tin of pineapple thinking it was a bargain, and have since realised there is no way on earth I'll eat it all before it goes off once it's opened. I want to use it in smallish batches for smoothies and fruit salads etc, so can I freeze it?

    Any help greatly appreciated thanks!
