  • when i was at school the dinnerladies used to make sponge tray bakes with pineapple chunks in the sponge and then iced with normal white icing and sprinkles. it was and is my fave pudding ever.

    also upside down cake? pineapple trifle? pineapple in jelly?

    topping on a home made pizza or pineapple upside down cake which my oldest (6) constantly asks for!!! :D

    I've been Money Tipped!
    On baking made easy she ade little filo tarts...just filo pastry cases in a cup cake tin till crisp and cooked...

    I did this for dh last weekend with some butterscotch mixed through whipped cream and pineapple I'd lightly sugared then grilled I had mine unsweetend with yogurt...his looked better but mine was nice.

    My favourite pudding ever - pineapple fritters! I make it with a simple batter made from plain flour, the juice from the pineapple tin and as much milk/water as you need. Tip the pineapple in, coat it in the batter and fry it then serve either with sugar or syrup on :) yummy!

    There are lots of recipes for Carrot cake and Hummingburd cake that you can used tinned pineapple in. Also, if you blend it with some coconut cream and freeze it, it makes lovely 'tropical' ice lollies.

    Hot Pineapple pudding

    2oz flour
    2oz margarine
    2oz sugar
    ½ pint milk
    2 eggs, separated
    Small tin pineapple chunks
    3oz caster sugar (for meringue)

    Method
    Make white sauce with the flour, margarine, milk and sugar. Mix egg yolks with the juice from the pineapples and add to the sauce. Boil up and stir until the mix thickens then add the pineapple.
    Whisk the egg whites in a bowl until light and fluffy and add the caster sugar for meringue topping.
    Pour the custard mixture into an ovenproof dish then spread the meringue over the top. Bake in a medium oven for about 15 minutes till the meringue is golden.

    does it have to be puddings ?

    how about as a topping on a pizza, or a savoury lunch snack with cheese, ham and crackers ?

    one of my fav hot puddings with pineapple, is upside down cake, very yummy and simple.
  • Whizz it up in a processor so its tiny pieces then mix into double/whipped cream... its very sickly though lol!

    Topping for microwaved sponge pudding. Yum and only takes 5 mins rom thinking about it to serving!

    50g sugar
    50g soft butter
    1 egg
    50 g SF flour
    1 tablespoon juice or milk
    1/2 teaspoon baking powder

    put everything in bowl and mix well for 2 mins until smooth
    place topping eg, pineapple or apple or dried fruit or syrup etc in a basin
    put mixture on top
    cover with cling film loosely so it wont touch
    microwave for two minutes
    turn out upside down onto a plate
