Mushrooms never seem to freeze, or at least they don't defrost

Raw egg yolk. It is still hard when it defrosts.

  • I just wondered if the packaging does not say you can and doesn't say you can't freeze it, eg some Tesco Bratwurst I just bought, does it mean that you can?

Should be OK. When you think about what you can and can't freeze the rules are pretty simple.
Never refreeze anything in it's original state after defrosting unless you've changed it's composition first.
So no refreezing uncooked chicken, but OK to freeze again if it's been cooked.
No refreezing food that has been cooked and defrosted.

Also, if you're buying fresh or ready made meals, think about what you can buy frozen, and if it comes in same category, you can freeze it.
Might not be as nice once defrosted as freshly made but that's freezing for you :)

From recent experience: mayonnaise does NOT freeze happily.

  • Sorry to go slightly OT but someone mentioned bread in the fridge.. I usually keep our home baked bread in a bread bin but it doesn't keep fresh for long (eg. next day I would only use it for toast)- would it keep fresher for longer in the fridge??

No, it won't - in fact, it stales more quickly in the fridge. Something to do with the action of the temperature on the starch/gluten I seem to remember. Freezing doesn't have the same effect, but I find it does dry home-made bread out a bit.
