Should be OK. When you think about what you can and can't freeze the rules are pretty simple.
Never refreeze anything in it's original state after defrosting unless you've changed it's composition first.
So no refreezing uncooked chicken, but OK to freeze again if it's been cooked.
No refreezing food that has been cooked and defrosted.
Also, if you're buying fresh or ready made meals, think about what you can buy frozen, and if it comes in same category, you can freeze it.

Sorry to go slightly OT but someone mentioned bread in the fridge.. I usually keep our home baked bread in a bread bin but it doesn't keep fresh for long (eg. next day I would only use it for toast)- would it keep fresher for longer in the fridge??0

No, it won't - in fact, it stales more quickly in the fridge. Something to do with the action of the temperature on the starch/gluten I seem to remember. Freezing doesn't have the same effect, but I find it does dry home-made bread out a bit.
