Do you have a chicken in your repertoire for the week?
Lemon juice in HM chicken stock (just boil up the carcass), add a bit of parsley and thyme, pour over steamed rice & serve with chicken leftovers or white fish. (OH doesn`t like risotto, but loves this)0 -
What about a lemon meringue pie? I also like the suggestion by gigervamp (great name btw) of freezing it in ice cube trays.

Hi all,
I have dillegently made my first menu plan, helped by all the advice on here, so thank you. I have baked teabreads instead of buying snack bars and I am left with two 'bald' lemons!
All the recipes I can find require lemon zest- which I have already used. I have a recipe for lemon drizzle cake, which also needs zest. So I need to find a recipe to use the lemon juice. I have been on the bbc good food website and the recipes seem quite complicated (thus meaning I need more ingredients) or again require zest.
Does anyone have a recipe that uses up fresh lemon juice please? It may be something totally obvious- so as I am new to the thrift board, please be patient!

Doesn't your lemon drizzle cake use the juice mixed with a bit of sugar and then the juice mixture is drizzled over the cake...you poke holes in the cake first.
When I make it I use the juice of 2 lemons to make the drizzle.0 -
I make this recipe I squeeze loads of lemon in. Love it. Drink hot or cold.

My favourite salad dressing - this is a Jamie Oliver recipe and is gorgeous with a Greek salad with tomatoes, leaves, feta, olives etc.
10 tablespoons of extra virgin olive oil
3 1/2 tablespoons of lemon juice (about 1 lemon - I just squeeze one lemon and use that without bothering to measure)
Salt & pepper
Place all the above in a jam jar, shake, pour over your salad0 -
mix with melted butter and sage chopped finely and pour over new or salad or bite sized bits of potato.Non me fac calcitrare tuum culi0

I'd go for lemonade, but two lemons probably make enough to be worth the effort. You could juice the lemons and freeze in icecubes for use in recipes.
