When the recipe calls for the zest of four lemons but the juice of just one,

what do you do with the other three? I know they cost pennies, and I'm normally quite a wasteful person, but throwing three lemons away seems wrong even to me. What am I going to do with the other three?

if you have no use for lemon juice at the moment then juice all the lemons and store the juice in an ice cube tray in the freezer. You'll always have fresh juice to hand for salad dressings recipes etc0

I'd freeze the juice out of the other three lemons for use later on, either in one container, or seperately. I've frozen it in ice cube trays so that if anything need a teaspoon or two of lemon I can just put in a cube. Otherwise you could make some lemonade with the remaining juice.Unofficial Debt Free Wannabee.

You could probably freeze the lemons whole - they'd go a bit squishy when they're thawed but if all you want is the juice then that doesn't really matter.0

I too would slice/quarter them and freeze. They are softer once thawed but the flavour is more concentrated.
Another option is, as they will be pretty ugly once grated, stick them inside a chicken next time you roast one for a bit of exta flavour:D0 -
As you haven't got a freezer you could try preserved lemons. Basically you cut the lemon into quarters and pack it into a jar of salt, you can add peppercorns and bay leaves as well. Preserved lemons are good in middle eastern recipes.Unofficial Debt Free Wannabee.

I wrap in cling-film and pop into the fridge....they look a bit ugly, but can be squeezed fine for a pancake dessert or to go into a cake.
Do you have an ice-tray in your fridge? If so, slice them up put in a single layer in a freezer bag, and stick them in there - ideal for those long cool drinks in the garden as we go into summer0 -
There's some 'famous' alcoholic lemon drink .... don't know its name, but I've seen it on the telly when people are wanting to buy a house abroad and the presenter takes them to a local XYZ place.... and I think Jamie Oliver met a bloke in Italy that did this stuff too. It's basically just sliced lemons and alcohol (maybe sugar?) in a sealed jar for X days, then drink it.
Now I have to Google it to make more sense of it0
