    make some pancakes and serve with sugar and lemon

    Make a lemon sauce with flour and a chicken stock cube and the lemon juice and serve with roast Mediterranean veg and rice or couscous. It takes the dryness off it and brings out the flavour of the roast vegs.

    Do you have a chicken in your repertoire for the week?
    Lemon juice in HM chicken stock (just boil up the carcass), add a bit of parsley and thyme, pour over steamed rice & serve with chicken leftovers or white fish. (OH doesn`t like risotto, but loves this)

    Chicken is currently boiling as we speak!

    Thank you so much for all the suggestions- it never even occured to me to freeze it...........

    I have jotted the suggestions into my planner book (I am really getting into this planning malarky!) Salad dressing is brill idea- we are growing lots of our own salad this year so will have a go at that.

    The lemon drizzle cake recipe I have (Mary Berry) requires zest but I might have a search around for another one.

    I bung my bald lemons in my salad drawer, and use them for dressings, to tone down a curry sauce, or something that's gone a bit salty, to stuff roast chickens or just put in a roasting pan with pork.

    Lemon juice is also good to put in pans of peeled root white veg to stop discolouration if you are not cooking straight away. Lemon is my complete standby seasoning.

  • Does anyone have any lovely recipes for using up a bag of lemons? I'd prefer sweet recipes over savoury, but I'm open to all kinds of ideas! Lemon drizzle cake has already been made, and after that I'm out of ideas!!

    We made lemon brulee sometimes, have I spelt that right? But we don't use just lemon juice we make our own lemon curd and mix that in. You could make some lemon ice cream, you can make an ice cream base and add the juice of at least 3 lemons if you're making 500ml, if you don't have an ice cream maker put it in a freezer bag and whack it about every so often until is ready. Or what I find makes a better texture is to 2/3 of the mixture and then bash it about, add it to a food processor along with the remaining mixture and turn it on, it freezes the rest and makes it fluffy like ice cream.

    Lemon curd - I love Nigel Slater's recipe for lemon curd, I think it is on the BBC website.
