    A huge lemon meringue pie,tarte au citron my recipe uses about 6 lemons,simple lemon Victoria sandwich cake (zest in the cake mix,juice in the butter cream filling)which you could freeze or like others have said make lemon curd.IMG_1072_zps265ace11.jpgIMG_1753_zps841d9721.jpg

    I've been making limoncello liquer for christmas presents this morning.
    I now have a bowl of lemons that have had the zest removed, didn't realise you don't use the juice.So, any ideas to make use of them?

  • We usually squeeze the juice and keep it in a small bottle in the fridge, it doesn't last long with us as use it for lots of things.


    It also freezes quite well in ice cube trays to make it last longer.
  • I think you could probably just freeze them, they'd be mushy when they came out but ok for juicing?!?

    Squeeze them and freeze in small amounts - ice cube bags or little bottles. Then you won't have that "Drat, I forgot to get a lemon" problem with your recipes.

    Lemon curd, made without the zest such as in this recipe?

    I think there's also lots of cleaning uses with lemon juice, such as here.

    I slice and freeze them too, then use them instead of ice cubes in coke. They will go a bit mushy as they defrost but that means you get more lemon flavour in your drink which is nice.
