  • No more snow overnight (thank God) but it hasn't thawed. I am *so* tired of this and the cats have cabin fever - there's been a whole lot of thwhapping this morning and popping out for a pee hasn't been enough to calm them down. It's going to be a long day ...

However. The good news is that we will make the best of it. I'm going to curl up with a hot wheat bag, blanket and book in a minute. Am being sponsored to read for Cats Protection this year so the extra reading time isn't time wasted.

Hope everyone has a good day.

Nic very grey skies here in south yorks too:rolleyes:, tons of snow forcast later and overnight.....between that and ds being ill i am wondering if I will get to work tomorrow as we have no one else to care for ds, that means unpaid parental leave after OH being off all this week due to the snow....oh joy! Bread and water for the month then:o:cool:

    Good morning,

MSD thanks for thinking of the house elf. He is fine and talking ten to the dozen. I on the other hand seem to have some sort of respiratory infection and I'm coughing and wheezing.

We're still mostly iced in. Grumpy's school is supposed to be open tomorrow, as they've cleared a path to the school, but it's supposed to snow again tonight. I'm getting used to him being here most of the time, and the cat was distraught when he left for the one morning he actually went to school this week.

I think I may get my crochet hook out and start a blanket. I made the last one when I was 12, and it stayed with my gran right through her last illness. I had one that my nan made for me when I was a baby, so maybe Grumpy would like one made by his mummy too.

We're having a roast chicken dinner tonight. Lunch will probably be soup or a toastie. I'd like to make some cheese scones too, for me, but no idea if I'll get round to that. I need to hoover downstairs too. I only did it yesterday, but it already looks like I didn't bother.

NPM I hope Noah's better soon. I tend to judge if Grumpy is ill by the talking. If he's quiet I worry!

    Take care all of you

    Morning all:hello:

OH has gone to the sailing club in B'ham because he is on rescue duty. I'm hoping they will send him home again, but if the reservoir isn't frozen then they have to be open to anyone who wants to sail! Who on earth is going to want to sail today??

Lunch wil be an assortment of leftovers I think, bits and bobs that need eating up plus plenty of bread.

Supper will be haricot beans and ham in a spicy tomatoey sauce -basically homemade baked beans with ham in. It will use up the end of the Christmas ham.

I'm determined to make a suet roly poly for pudding with marmalade in it rather than jam -like Mrs Beaver made for Peter, Susan, Edmund and Lucy in The Lion, The Witch and the Wardrobe ;)

I might do some lunchbox baking later too.

Leek and Smoked Mackerel Tart for Diva

It was just a basic quiche recipe with a filling of sweated leeks and a smoke mackerel fillet.

Make enough shortcrust pastry to fit your tart tin, I made a big one -11 inches, so used 10oz flour and 5oz fat but 8oz and 4oz will be enough for a smaller tart.

Line the tin and bake blind for 15 mins at 200c. Meanwhile slice 2-3 leeks and sweat gently in butter.

Fill tart with leeks, scatter flaked mackerel over.

Beat together 3 eggs and 7 fl oz of cream. Use 2 eggs and 5 fl oz cream if making a smaller one. I used a handful of frozen cubes of double cream defrosted and made up to the required amount with milk. Single cream would be fine, or a mix of milk and crème fraîche, or yogurt.

Pour eggs and cream over tart. It is a good idea to put the tin on a baking sheet in case any filling leaks. Grind over some black pepper, it doesn't need salt because of the mackerel. Bake at 200c for about 35 mins.

    Variations
As you can see this is a great recipe for adapting. Just use whatever fillings you have. Leek and bacon is also delicious but cook the bacon first so it is nice and crispy. Onions instead of leeks are yummy with cheese scattered over the top. Use different smoked fish-kippers, salmon, haddock (cook first). Ham of course, or any cooked meats are excellent. Vegetables must be cooked first. Mushrooms, sweetcorn, spinach, asparagus in the spring, watercress are all good. All kinds of cheese are good too.

Yes, you can but they won't break down to pulp the same way stewed cooking apples do.
