I would slice an onion and saut!, add thin slice beef and then a large amount of gravy (I use bisto instant) and warm through. Serve on crusty bread roll for easy meal or with veg. Alternatively it would be nice in a stir fry or add to peanut sauce for a satay on rice :) lots of yummy options!!

If its in slices, i would put it in a dish like the ones you get from the takeaway. Cover it in leftover gravy and freeze it. My mother says its even better the second time around and you wont have to buy another joint of beef next sunday.

leftover beef is a rarity in my house! usually I make curry with it! virtually instant curry as I use Mayflower Curry Sauce (made in three minutes exactly) and chuck slices or cubes of leftover beef and some cooked peas in it! its virtually identical to the one the local chinese charge £4.50 for! and I get at least two servings from!

i once did an amazing version of corned beef hash, the traditional kind. cook onion slices, boil some cubed potatoes then put oil in the wok and fried off the cubed potato and cubed beef. so all the edges are crispy and golden. then i topped it with a fried egg and lashing of chilli sauce. i did drain all the food if that makes you feel it was a little healthier.
    it was damn good tho.

Stir fry? Slice it into small strips and stir fry with a few veggies and some soy sauce. Lovely for a quicky lunch :)

Mine too. I'd come on to this thread with the advice that hiding it from the OH is usually a good starting point :rotfl:

It is really very versatile. I make curries, pies and mince-type meals with it, but often I will just warm it up and make another roast the following day.
