    Hi

I made Roast Beef for tea last night, and have a lot left over. I am looking for inspiration as to what I can make for tea tonight with the leftovers.

    Thanks

I make curry or chilli with left over roast meat. If there is not enough to serve everyone these can be streached with tinned beans or chick peas.
You can also reheat it, slice, pour over gravey and reheat in the microwave.

Beef hash is always a winner in our house
    1) cube your leftover beef and roast potatoes (you can always peel a couple more spuds if you have no pots left)
    2) add to a pan with your leftover gravy and top up with some beef stock
    3) bring to a simmer and simmer until the potatoes have started to mush
    4) season and serve

    Hi Cat,

A pie, casserole, hotpot, reheated in gravy as another roast dinner, finely chopped for cottage pie, a chilli or sliced to use in fajitas? This pie is one of our favourites and would be lovely on a cold day like today:

    Left over beef chopped
    Half an onion
    4 mushrooms
    1 small potato
any leftover veg and gravy or 1 beef stock cube and whatever veg you have.
    Black pepper
    Bay leaf
    Frozen (shop bought) puff pastry

Fry the chopped onion, mushrooms in a little oil, then add the chopped potato and beef. Then throw in any leftover veg and gravy a bay leaf and black pepper and simmer until the meat is tender and the veg cooked. When you’re ready to make the pie, remove the bay leaf and thicken the juices with a teaspoon of corn flour mixed in cold water.

Roll out the pastry; add filling, brush the pastry with some milk or beaten egg and decorate if you have time. Pop into the oven at 200 degrees until the pastry is risen and golden.

We have an existing thread with lots more ideas to give you inspiration so I've added your thread to it to keep the suggestions together.

    Thanks all, dilema over.

I have cubed my left over beef and bunged into the slow cooker, with some worcestershire sauce, bouquet garni, carrots, frozen peas, potatoes and topped up with gravy. Will serve with some yorkshire puds. Smells divine.x

    Hi there

Unfortunately I overcooked some topside and it's dry. We had half for lunch but I don't want to bin the rest obviously. Therefore I plan on using it in a stir fry tonight however it's really dry so was wondering if frying it off first may help give it a bit of life?

Or any other ideas than stir fry?

    TIA

My grandma always put left over beef through the mincer and made cottage pie, I guess the mincing it and adding gravy might soften it up?

I'm always overcooking beef. 15 years of previously being a veggie has meant I usually overcook most meat, tbh! :o

i once made an amazing corned beef hash type thing. cubed potatoes and cooked them then let them cool. then put some oil in a pan, fry off some onions, and add the cubed potatoes and cubed beef, cook till warmed through and crispy. then had this with sweet chilli sauce and a poached egg. with a salad, so a warm salad type thing. one of the most gorgeous left over beef recipes i've ever made.
