If i have some tough meaty leftovers, i either slice the meat and freeze in gravy for use another time, or do the cotttage/shepherds pie trick.

I'd slice it thinly and cover in gravy or a red wine sauce and then reheat it through for dinner. It comes out beautifully tender.

Thank you everyone.....with todays heat I was thinking the warm salad may go down well but I have no other ingredients!

I'll give DH the option to choose - something he rarely has :) and report back tomorrow.

Mix into mayonnaise with peppers, or whatever takes your fancy and fill wraps with plenty of salad.

Since I started cooking beef joints in roasting bags, they come out wonderfully moist. I don't know if that would work with an already cooked one, put it in a roasting bag to heat up before serving.

Hi, any ideas for leftover roast beef?

I always make steak and ale, chilli or beef stew on a monday and the family are a bit fed up of them now.

Any suggestions? I'd need to throw it in the slow cooker before work on a Monday morning.

    Thanks all

I'd slice it and pop it in the slow cooker with a load of finely sliced onions and top with beef stock. Leave on low and when you get home serve the sliced roast beef and onion gravy with mustard mash and veggies :j

I sometimes serve leftover cold meats with a cheesy veg bake (leftover veggies from the Sunday dinner, pour over some cheese sauce and bung in the oven for 20 mins). Supplement with some frozen peas or similar if there doesn't look to be enough cheesy bake. Job done :)
