    Echo Chris's post. We do this all the time. Roast the whole joint keeping all the juices and fat. When cold slice up and make meal sized portions wrapped in foil with some of the gravy/fat on top and place the neat foil parcels in the freezer. When you fancy a roast beef dinner pop one of the frozen parcels into the oven while you either roast some potatoes or heat up some frozen roast potatoes. All you have to do then is some quick veg. Bingo!

    Thank you everyone! That's given me some great ideas. I was all a bit worried that I couldn't freeze it once cooked. But you have all made me very happy!

    A curry. Beef is suited to stranger curries eg madras. Beef stroganoff? Put in a pie?

    I often slow cook a large joint of beef, and one day have a roast with yorkshire puds, potatoes and veg,

    The following day we would have sliced beef with rice and peas, and sweet chilli sauce.

    And the next day would do a huge homemade stirfry, and add the rest of the beef chopped into chunks and mix the beef and stirfry with quick cook noodles.

    We love beef here (2 adults and 2 chidren (13 & 9), so don't have an issue with eating it in various guises for 3 days in a row.

    I'd also use some sliced beef for sandwiches - beef, tomato and onion with black pepper.
    2016 is the year I am going to find time for me, and cherish the time I spend with my friends and family.
    It is also time to save - Aim £4,000 - So far this year - £230/£4,000

    We bought one on offer (2kgs) and I split it into four. (2 people household) each 1/4 did two dinners. Roast, stirfry, stroganoff and braised beef.
    If you dont know where you are going... Any road will take you there :rotfl:

    When we have beef, a large joint for the two of us is too much. But I waste nothing. After the roast beef I dice up the remainder and us it in both a Beef casserole and\or a Beef curry. OH loves them and nothing goes to waste.

    I had some leftover beef at the weekend. I fried a chopped onion, minced the beef up finely, mixed an oxo cube with a little water and some mixed herbs. I made some pastry and put the beef etc in a pie (one of the ones with a bottom as well as a top) and baked for 40 mins. It was gorgeous!

    I still have not mastered making pastry for a tasty pie. I know I could cheat and buy ready rolled pastry, but I dont think you could beat a good homemade pastry for a homemade pie.

    There's a new Sainsbury Live Well For less magazine & there's an article in that with a couple of recipes for using leftover beef.

    One is for Italian beef stew - effectively, mediterranean veg cooked in tomato with strips of cooked beef thrown in & served with ciabatta.

    The other is beef & exotic mushroom stroganoff - a creamy mushroom sauce with pieces of beef added & served with rice.

    dh made a wonderful beef dinner for my birthday yest and theres a nice bit left,

    wonder if anyone has inspiration what to make from it ideally 2 meals,

    ive pasta there

    rice

    and some veg but need inspiration
