you could try cutting into chunks, or slice thinly, putting in an roasting tray with a bit of water, cover the tray with foil and putting in the oven to steam for an hr on low(gas 3/4).
failing that chop up and make a beef casserole/stew.
If you have a slow cooker, chop the beef up with some veg and a litre of stock and let it simmer all day.
On the hob let it bubble up stir and simmer for 20mins, then take it off the heat for a while. after an hour of so repeat.

If it was that tough, then you're going to have to slow cook it now to make it edible. You can do that either on the hob, in the oven or in a slow cooker if you have one. If you cook it on a low heat and for long enough it will become lovely and tender.
This is what I do with leftover roast beef, because I find that unless it's been cooked very rare it can be a bit tough when reheated:
Left over beef chopped
Half an onion
4 mushrooms
1 small potato
any leftover veg and gravy or 1 beef stock cube and whatever veg you have.
Black pepper
Bay leaf
Frozen (shop bought) puff pastry
Fry the chopped onion, mushrooms in a little oil, then add the chopped potato and beef. Then throw in any leftover veg and gravy a bay leaf and black pepper and simmer gently until the meat is tender and the veg cooked. When you’re ready to make the pie, remove the bay leaf and thicken the juices with a teaspoon of corn flour mixed in cold water.
Roll out the pastry; add filling, brush the pastry with some milk or beaten egg and decorate if you have time. Pop into the oven at 200 degrees until the pastry is risen and golden.

Thanks so much! I was thinking of slicing it up and putting it on a low heat in the oven with some gravy but was worried it would make it even more tough!!

If it was that tough I definitely wouldn't just reheat it in gravy in the oven. For me it would have to be slow cooked into a casserole with stock and loads of veg.0

Hello all you experts!
We have a 1.6kg joint of beef in the freezer that was meant for Christmas with family but we didn't quite get round to cooking it. There's three of us in the house (2 adults and a toddler) - and it is way too much for us to have in one go. So I'm now wondering what on earth to do with it as I don't want to cook it and then not know what to do with the bits we don't eat and have so much that it ends up going to waste.
So my question to all you experts is, how can cook it for as many meals as possible so that it all gets used up? All ideas gratefully received!0 -
If we have beef, I usually buy a large joint and then mince the leftovers, mix with onions, carrots & gravy to make cottage pie.
If it's uncooked, could you roast it, then cut it into 2 joints, using 1 & freezing the other one.
Or you could roast it, slice it up & layer with gravy & then refreeze - another thing I often do.0 -
Its strange but a big joint of roast beef always tastes better and is more tender than a smaller one.

What about stovies?
Chop up some leftover beef and some leftover roast potatoes. Add to a pan with the leftover gravy (topped up with beef stock if necessary) and simmer for an hour. Serve with yorkies - yum yum yum0 -
Slice what you need for the main roast meal + cold for next day, or sandwiches. Left overs can be sliced into stir fry portions and refrozen.0

How about cutting it in two and roasting one piece and cutting the other up and making a beef casserole, goulash, etc and then freezing that in portions to use another time.0
