Thought I'd post this here, just in case anyone is interested. We've made these in our house for at least the last 8 years and they are fantastic. A little bit lighter in texture than traditional pud, but very yummy.
Microwave Xmas Pudding
4oz/125g margerine or butter
2tbsp/30ml black treacle
1lb 4oz/500g mixed dried fruit
8oz/225g soft brown sugar
1tsp/5ml ground ginger
2tsp/10ml mixed spice
6oz/175g fresh breadcrumbs
3oz/75g plain flour
3 eggs, beaten
grated zest and juice of 1 lemon
1/4pt/150ml stout
To make:
Makes 1 x 2pt (1.2l) pudding and 1x 1pt (600ml) pudding or 3 x 1pt (600ml) puddings- Melt the butter or marge in a large (6pt/3.5 litre bowl) for 1 minute on High.
- All all the remaining ingredients - mix thoroughly.
- Cook uncovered for 6 minutes on High, stirring every minute, until the mixture is bubbling on the surface.
- Fill each pudding basin and smooth the surface before covering with greaseproof paper (lightly tied to allow for expansion). I normally use a bit of dampened string for this.
- Cook large (2pt) puddings for 25 minutes on Defrost. Cook the small (1pt) puddings for 12-13 minutes on Defrost. You can check the puddings are ready by just touching each one with your finger. If it's cooked it will be firm and dry on the surface.
- Remove from the microwave and stand each pudding for 15 minutes.
Remove them from each pudding basin when cool. Wash the basin, replace the pudding in it, and cover with cling film or wrap in muslin and tie with ribbon.
They will keep in the fridge for up to 8 weeks.
To heat on the day:
Put the pudding in a microwaveable bowl or on a plate.
Reheat the large pudding for 8-10 mins on Defrost.
Reheat the small pudding for 5-7 mins on Defrost.

Shevs ~ I am having the same problem with presents for my children. I have brought all their presents but keep seeing more in the sales and buying them! I have had to have firm words with myself and have put some away for their birthdays. I also found myself buying sale items (especially the Sainsburys toy sale) and instead of thinking ohh i have saved money i would buy them something else with the saved money :rolleyes:
I am bit upset as my 18 month old dd had a appointment for Great Ormond Street hospital yesterday and we were going to get the results of her MRI scan and EEG but she is poorly so they said we had to cancel the appointmentwhich i can understand as she could spread her poorly germs to other children . But I now have to wait until the 17th December for the results (they wont tell us over the phone), treatment, follow up etc if any neededI juts hope that if it is anything bad they would of let me know by now as she had the EEG and MRI begining of October / End of September and she is still having these fits (if they are fits?
) everyday several times a day. Sorry for the whinge but it just bit disappointing and worrying that i have to wait another 4 weeks.
On a lighter note we had fireworks in the garden last night. My 18 month dd wasnt keen even with ear muffs and 2 hats on to muffle the bangs. Also one of the fireworks exploded funny and shot pass as and landed about 4 foot away from us! At that point we stopped using them incase it was a faulty batch and had the sparklers and went in for food! :eek:
I am very excited now Halloween & Fireworks night is out the way and its now Christmas. Artificial trees – only thing I can advise on is that I bought mine from B&Q a few years ago, and love it. It’s a nice height (5ft ish? But I always put it on a coffee table so more room for pressies underneath!) but not too wide, but ‘full’ if you know what I mean! Lol It also has those hook on branches (except for the very top bit.). They always seem to have nice ones in B&Q – possibily more expensive than some places, but if you’re looking for a bit of an investment, then why not!
Also, I’ve never had a pre-lit one, but I always think that however much hassle the lights are, at least you have the flexibility to change them to fit a theme when you want to! I have a set of 100 multicoloured ones (yeay!) but I could replace them with all blue, or all white, and have a completely different theme if I wanted.
Ragz – Santa Claus the Movie is my favourite – a very traditional ‘Father Christmas’ and his elves!! Love it!
mary-op – my thoughts are with you. Hope it all goes really well!
Shevs – hope your visit to the hospital goes well at the end of November too!

I had a bit of a hospital experience last night. Hubby was moving his car slightly (due to tight parking in our street), and with wet shoes his foot slipped off the break. His car shunted quite badly into my car. I was stood behind my car getting shopping out, so it shunted into me, squashed me into our neighbours car, which also shunted into the car behind!! I felt shunted about 3 times, and ended up on the floor with all the neighbours (who are WONDERFUL) around me, hubby obviously distressed and panicking, and ambulance on the way. I was the most calm out of all of them apparently!! Anyway, long story short, ambulance took me to local hospital (who are also wonderful!), only damage I seem to have is severe bruising and swelling around my knee/upper calf/lower thigh on my right leg. No breakages, my kneecap is in tact, and I think my added weight really helped! Lol If I was stick thin my leg/s would probably have ended up in plaster! Yeay for chunky thighs. Also, because of the size of my and the neighbours car, all the impact was on my legs and thankfully no where near baby – who is just as active as normal! So alls ok, just back of my leg sore (think carpet burns/grazes type stinging feeling), and swelling around my knee making it difficult to bend. Could have been a LOT worse!! Hay, plenty of time to potch at home with Christmas stuff! lol

We brought ours from B&Q about 3 years ago for something stupid like £5 in a sale. It is really nice. Like you said not too slim but not too wide either. Ours is 6ft i think and alsio havs the hook on branches for the bottom 2/3 then top 3rd is fixed branches.
Blimey Clare thank goodness you and baby are ok :eek: Bet your dh felt awful. He and you must of been so scared for yourself and baby. If you can def rest up you poor thing.
