    Normally in an ordinary cake isn't the butter in equal proportions to the sugar and flour?

    I notice the flour and sugar are in equal quanitites in the given recipe.. 155g each.

    Thanks for the recipe. I made this yesterday and it came out perfect.

    I sieved the flour and bicard together. Everything else I just bunged in and mixed it with a fork.

    This is my favourite recipe:

    Banana Bread

    8oz S.R Flour + 1 tsp baking powder
    3oz Butter or Margarine
    4oz Sugar
    2 Eggs
    2 or 3 Bananas roughly mashed (older bananas are very good for this)
    Optional 2oz nuts or 2oz raisins.

    Roughly cream butter and sugar.
    Beat in eggs
    Add mashed bananas
    Stir in the flour and any other ingredients.
    Pour into a lined 2lb loaf tin and bake at 170º
    for up to 1¼hours.

    Check after 45 min. It’s done when a skewer comes out clean.

    I've seen lots of reference to banana cake and how lovely it is!, Does anybody have a nice recipe for one please, or do I just use a normal cake mix and add in mashed bananas.

    Hi fabfamily,

    This is the recipe that I use:

    Makes two loaves...we usually eat one and freeze one.

    6oz margarine (I use flora)
    9oz caster sugar
    3 eggs
    4 mashed bananas (the riper the better)
    12oz sr flour
    1 1/2 teaspoons of baking powder
    3 tablespoons of milk

    Pre-heat the oven to 180 degrees and grease and line (with greaseproof paper) two 2lb tins.

    Cream the margarine and sugar together, then add the eggs and mashed bananas.

    Next add the flour, baking powder and milk and fold into the creamed mix.

    Pour the mixture into the lined tins and bake in the centre of the oven for about 45 minutes or until they are a light brown colour.

    Turn them out onto a baking rack, remove the greaseproof paper and leave to cool.

    I'm having problems with a banana bread recipe. It uses 3 mashed bananas/165g sugar/1 egg/150g SR Flour and 'supposedly' bakes for 30 mins at Gas Mark 4 in a 2lb loaf tin.

    Has anybody else used this recipe please and how did you find it? Mine was still 'wet' after over an hour in the oven and I had to reduce the temperature to No.3. Even when finally removed from the oven and cut into, it was 'extrememly moist'.

    Has anybody got a better recipe please?

    I had exactly the same 'problems' with this recipe and thought it was something I'd done. Over an hour in the oven and still very moist when I took it out.

    However, once it was cooled I wrapped it in tinfoil and put it away for a couple of days before cutting (to be honest wasn't sure if it was going to be ok). In the end it was absolutely delicious and a hit with all the family.

    I don't think there is enough flour in it...

    Anyway I use:
    2-3 bananas depending on their size
    1 cup of sugar
    2 cups of self raising flour
    4 tbs oil

    that's it. I cook it in the breadmaker and it takes about 50-55mins

    I use this one and it's quite reliable.

    Banana Cake
    1 Egg
    75g Butter
    100g Caster Sugar
    225g Plain Flour
    2 tsp Baking Powder
    4 Bananas

    I sometimes add chopped chocolate pieces, cinnamon, nutmeg, nuts, fruit, brown sugar sprinkled on top.

    180 C for 45 - 55 minutes (although it's quicker in my oven as it's a fan oven.)
