Oh also, I do think banana cakes are always more moist. Rather than test with a skewer, listen to the cake and when the popping noises stop (or very nearly stop) it's done.0

This is exactly what I've done at the moment - thanks for the reassurance.
The other alternatives sound very useful, so I'll make notes of the variations and give them all a go one-by-one.

16 oz Self Raising Flour
1/2 teasp Bicarb
6 oz Marg/Butter
12 oz Sugar
4 Eggs
4 Mashed Bananas (but it will take 3-6 if you are short or have any to use up)
Oven 180 / gas 4
for approx 80 mins.
This makes two 9 inch loaf tins.
I have made this for 35 years. never fails. Freezes very well.
If you have Bananas and don't want to make the cake today, mash them up with Lemon juice and freeze them. Defrost before you use them in this recipe.0 -

I went on indexed collections, then to cooking and recipes, and found loads of different ones to try. Sorry don't know how to post links0

4 Mashed ripe bananas
2 Beaten eggs
1 teaspoon mixed spice
75 grams Raisins
115 grams Self raising flour
Mix together the beaten eggs and the mashed bananas ,add the rest of the ingredients and mix well .
Put mixture into a oiled loaf tin and bake of about 40 minutes at 180 c0 -

This is one I use all the time. It's from Shirley Goodes, The Goode Kitchen and works every time for me.
8oz self raising flour
1 level teaspoon baking powder
3oz butter or soft marg (I use olive spread)
3 oz granulated sugar
1 egg
1 heaped teaspoon apricot jam (I use whatever I've got available .. marmalade or ginger and marrow jam have gone in, in the past)
2 or 3 rip bananas (mashed with a fork)
few chopped nuts (optional ... I usually use chopped walnuts)
Sift the flour and the baking powder.
Cream the fat and the sugar until fluffy and add a teaspoon of the flour and beat in the egg (stops it curdling)
Fold in the rest of the flour and the rest of the ingredients
Pour into a greased and floured 1lb loaf tin (or use a cake tin at a pinch)
Bake at gas mark 4 or 180C for about 45 minutes until golden brown
Test with a skewer (if it pulls out clean, then it is done). If it starts to brown too quickly then cover it with foil during the last 10 minutes or so.
Cool on a wire rack. I tend not to turn it out straight away as it is so soft that it falls apartEnjoying an MSE OS life0 -

We all enjoy this one in our house,
165g sugar
1 egg
150g s/r flour
3 ripe bananas
chopped up mars bar (optional)
Mix all ingredients, bake 180 C for 30 mins
Its lovely with or without the mars bar, got it off a thread on this web site, not sure where it is now tho!!!
