    Hi got 5 bananas going nicely brown anyone got a nice recipe for banana bread or muffins to use them up many thanks.:T

    I just use a normal sponge mixture and add 2 or 3 mashed up bananas. It works fine. It tastes lovely.

  • Banana Brownie Recipe?



    Ingredients
    100g/4oz of butter, melted
    25g/1 oz cocoa powder, sifted
    175g/6oz soft brown sugar
    2 medium eggs, beaten
    few drops of vanilla extract
    50g/2 oz self raising flour
    1 large banana peeled and chopped finely
    25g/1oz shelled walnuts, roughly chopped (I leave these out when I make them!)

    Method
    Preheat oven to 190ºC/375ºF/Gas Mark 5. Grease and line a 18cm/7 inch square tin

    Mix the butter and cocoa powder together well. In a bowl, whisk together the sugar, eggs and vanilla extract until pale, creamy and thick in volume

    Beat in the cocoa mixture, then fold in the remaining ingredients

    Spoon into the prepared tin and smooth the surface. Bake for 35 - 40 minutes or until well risen and firm to the touch

    Leave to cool in the tin before removing. Peel away the paper and then dust with cocoa powder and cut into pieces.
  • I use the banana bread recipe from Martin's OS book. It's delicious and very easy to make. The recipe came from this site so I'm sure someone will have a link to it soon! It only uses 3 bananas though.

    Right, Am trying these out! In oven as we speak.

    Silly question, does it make a difference whether the bun cases are in a tray? My tray holds 6 and i have enough for loads so do i have to keep doing separate batches?

    also did i read storage in plastic bag is better than tupperware? So excited. Lots of firsts. Using old bananas i would usually throw out. Making muffins. Cooking with bananas. Using bun cases in the oven. Woop.

    Hi, would like to make thriftladys muffins but only have one banana. Only other fruit I have is small amount of dried apricots and some strawberry which wasnt very sweetm Its been in my work bag all day. WOuld this work, and is it really manky to use them :rotfl: I also have mixed nuts and walnuts

  • I'm a new member so please bear with me, however in response to the request for a banana muffin recipe ..... here's mine:-

    8oz Plain Flour
    4oz Sugar (whatever you have in the cupboard)
    2tsp baking powder
    Half tsp salt
    4fl oz milk
    8fl oz vegetable oil
    1 egg
    2/3 ripe bananas (mashed up)
    + a good handful sultanas

    Preheat oven to about 170C (mines a fan oven and a bit temperamental so tend to stick to 160C)

    Put all the dry ingredients into a bowl.
    In a measuring jug pour the milk in and then add the vegetable oil upto to the half pint mark. Add the egg and then whisk.
    Throw in the bananas and the sultanas

    Add the liquid and mix until just combined (do not overmix)

    Put 12 muffin cases into a muffin tray and spoon the mixture in (should be about three quarters full)

    Pop in the oven for about 15 mins until golden (the top of the muffins should be springy to the touch).

    My OH and kids love these and they're a great way of using up those manky brown bananas in the bottom of the fruit bowl!!!

    I think you will need to use more milk ;) When you mash up 3 bananas you get quite wet mixture. What I would do is use 8 fl oz of milk instead of the 2-3 stated in the recipe. I would chop the banana with the other fruit and the nuts and stir them into the dry ingredients. Combine milk, egg and oil and fold into the dry stuff.
