How about making banana bread - and twice baking it?
The BB I made on monday is very 'wet' (moist!) so I could imagine it caramalising.

Hi Noopynu the flourpowercity web site says their twice baked banana cake is baked once normally and then a frangipane and flaked almonds are added and the cake is baked again.
Have found this recipe for you from someone who wanted to recreate a banana cake that includes the frangipane topping and almonds. She got her cake from Borough Market. I hope this recipe gives you some ideas

Frangipangi topping! Yum!
Now to make me a sort of bakewell covered by frangipangi.
Oh joy - one of my favourite cakes no longer availble in my village shop.
I always thought that frangipangi was some sort of magic essence type stuff, so it's great to know that I can make my own.

This is the frangipani mix I put on my mince pies instead of a pastry lid. Don't see why it couldn't work on top of banana cake mix
120g sugar
125g ground almonds
125g unsalted butter
2 eggs
I added a dash of almond essence as well, but you could use rum
Method
In a food mixer, mix together the butter and sugar and then add ground almonds, eggs and essences or rum if used
Add tsp of mix on top of mincemeat tartlets, don't use too much as it puffs up a bit
Bake in the oven at 180ºC for 30 mins until golden. Then cool.0 -
You guys are great and that thread looks pretty close, but the person who's posted it seems to have forgotten the butter quantities for the cake! Oh no! Has anyone got any idea's roughly how much it would be, I really want to try it this weekend but i wouldn't have a clue where to start if i was guessing the quantity!0
