I made one of these loafs/cakes and put it in the oven half an hour ago, 180 degrees etc followed the instructions to the T!! It looks done but the recipe said to leave it in the oven for 1hr 15mins!! :eek: Its going to be black if i leave it any longer - what have i done wrong???Win £2012 in 2012 challenge 0/2012

To check if it is cooked stick a skewer or knife in the middle. If it comes out clean it's cooked, if it is sticky with cake mixture then it isn't.
If it isn't cooked cover with foil to stop it browning any more and check for doneness every 15 mins.0 -

I made my first banana cake/loaf today. Very nice but slightly over-done (it's got a crust lol):rotfl: .
The recipe said to bake at Gas Mark 5 for 40mins to 1 hour. I had it in my head about the 1 hour - managing to forget about the 40 mins bit! Oh well life is a learning curve.0 -
These cook up a bit differently every time I make them..I think its to do with the ripeness of the bananas..If they are just speckly they cook quicker..when they are almost compostable they take longer
I also found my fan oven did a pretty good job of cremating the outsides while leaving the insides still wet so I now make them in my 'normal' oven and they come out much better*and yes when I burnt them I did just cut off the burnt bits and eat them still*

I want to make Nigella's banana loaf but don't have a loaf tin. In the spirit of money saving, can I make it in a cake tin instead? Or in muffin cases? I don't really care if the muffins don't rise that much, I'm totally happy with mini banana cakes, but will it work?0

I'm sure it would - just keep an eye on it, as smaller sizes are likely to cook faster!
