    Ok after reading this thread I am desperate to use up the three brown bananas I have in the kitchen. However, having read the recipes so far I am asking for advice on a few potential tweaks, as I want to bake tonight without going to the shops and wasting more money to save money.

    I have no eggs, bicarb, baking powder or SF flour:confused:. I DO have bread flour (!), raisins, butter, cinnamon and some cereals. I only mention the cereals cos I once made successful banana bread from a WW No Count recipe, that involved porridge oats and All Bran - sounds pretty gopping but was wonderful! :rolleyes:

    Any suggestions as to what I could cobble together successfully in a loaf tin?

    Has anyone got a good banana loaf recipe i bought a huge bag of bananas the other day for 30p but now they are turning so hope to use them in a cake.
    I don't get nearly enough credit for not being a violent psychopath.

    This is our favourite -

    165g sugar
    1 egg
    150g S/R flour
    3 ripe bananas

    mix together, pour into tin and bake for 30 mins, 180 C.

    You could also add a chopped up mars bar which is delicious, and the other day i chopped up a bounty bar which my DS loved!!!

    you don't have to use them all at once you can freeze some to use later
