165g sugar,
1 egg,
150g s/r flour,
3 ripe bananas,
Mix all ingredients together, pour into a loaf tin and cook for 30 mins, 180C
Sometimes I add walnuts or peacan nuts as well. If the bananas are really ripe/sweet you can get away with less sugar, or replace some it with honey. The lack of butter/fat is right, this recipe doesn't need any.0 -
Banana Bread
(great for using up those over ripe bananas)
3 very ripe bananas (almost walking) or use defrosted frozen bananas!
pinch of salt
6oz melted butter
1 teaspoon bicarb of soda dissolved in 1 tablespoon water
6 oz caster sugar
1 egg
9 - 10 oz plain flour
Smash bananas (food processor is great for this recipe).
Add remaining ingredients, mix together. Pour into 2 greased or paper lined 1lb loaf tins or 1 lined 2lb tin.
Bake in moderate oven (180C/350F/Gas mark 4) for 45 minutes. Will also make as muffins. Freezes well and is lovely sliced, toasted & dripping with melted butter.

I got 15 banana's at ASDA's yesterday for 30p. They are not over ripe yet though.

I made banana bread for the first time yesterday and it was fabulous!
I used nigella's recipe here: http://www.nigella.com/recipes/recipe.asp?article=141 but changed a few things. I soaked sultanas and other dried fruit in orange juice instead of bourbon, and chopped up mixed nuts instead of just walnuts. Also found some cystallised ginger in the cupboard so chucked that in as well.

HI guys, I though if anyone can help me with this it will be you! In our local farmers market which comes by once a month there is a stall that sells this amazing "twice baked banana bread", with the slogan "twice baked for that caramel taste" and it is absolutely amazing! but at £2 a slice it's a bit pricey! I want to know how i can make it as I HAVE to have more of it! I've trawled the Net but keep finding normal banana cake or bread recipes
