Yes, as SD says dough for 5 mins, the bake for 40 - 55 mins (for some reason it tends to vary in my BM). I sometimes add chopped dates and walnuts. Today I made one and added mixed fruit - lovely warm with butter.0

I have the Morphy Richards fastbake BM would this work the same? Have only used it for basic loaves so would love to try JESS444's banana bread in it!0

Hello everyone,
Does anyone have an easy recipe for the above floating about? I'm going to the CO-OP just now as I don't have any banana's but I really want to make this.
My cravings are changing daily and I really want to make this and eat it today?......
I also don't have a loaf tin whatelse can I use instead?

I bet you could just make it in an ordinary cake tin, I wouldn't worry.
When I make this I sprinkle the leftover sugar/cinnamon mix on the top, and it makes it even nicer.0 -
4oz s r flour
4 oz butter/marg
4oz sugar
2 eggs
couple of old bananas
handful choc chips if feeling generous
mash bananas
beat egg
rub fat into flour
add sugar.eggs and bananas and choc chips to fat and flour mix
have a bit if a mix
sling in loaf tin (greased and floured) or use paper liner thing.
Bake on about 180c until cooked throgh.
Keeps quite well because of the mashed bananas (but doesn't last long in this house)0 -
Banana Bread:
Ingredients
225g/8oz self-raising flour
100g/4oz butter
150g/5oz caster sugar
450g/1lb bananas (the softer the better), peeled and mashed
½ tsp salt
2 eggs
175g/6oz mixed dried fruit (optional)
1. Pre-heat the oven to 180C/350F/Gas 4.
2. Mix all the ingredients except the dried fruit together. You can do this in a food processor or by hand in a basin.
3. When they're all thoroughly mixed, add the dried fruit. Spoon the mixture into a 1kg/2lb non-stick loaf tin (a cake pan can also be used) spread it out evenly and bake it for 1 1/2 hrs (if using cake pan...about 45 mins). The loaf is done when a skewer pushed into its middle comes out clean.
4. Cool on a wire rack, then slice before serving.*If you like the advice I give...let me know by clicking the THANKS button*

Banana Cake
3 Medium sized very ripe bananas (mashed)
2 Eggs (beaten)*
200g/8oz Self raising wholemeal flour
100g/4 oz Caster sugar
1 tsp Baking powder
1. Mix the bananas and eggs together in a small bowl.
2. Mix the dry ingredients together.
3. Combine and pour into a loaf tin lined with greaseproof paper and sprayed with frylight (or if you're me just grease it and shove it in!)
4. Bake until a skewer comes out clean (this varies between 40 mins and an hour) (or if you're mean just prod it occasionally until you get bored!)
*If you don't have enough eggs you can substitute one or both for 80g of natural yogurt per egg. It makes he cake very sticky and moist and not as fluffy, but also cuts down on fat.Is it payday yet?:rolleyes:
