Banana Cake
4oz butter
6oz sugar
2 eggs
2 big bananas
8oz self raising flour
Cream butter & sugar, mix in eggs, mix in mashed bananas and add the flour. Transfer to a loaf tin and bake for 40mins gas mark 4. Check to see if its done and if not turn down oven to Gas 2 and cook for a further 20-30 mins.

Hi there. I need just the same myself! Lots of Bananas to use up:D . You can freeze bananas in their skins for use in cakes later in case you don't really want cake now (and why would you not want cake now?)

I got this recipe off Catowen
Banana Loaf
This is the recipe i use, my DS loves it!!!
165g sugar
1 egg
150g s/r flour
3 ripe bananas, mashed
Mix together, cook for about 30 - 40mins at 180C
Very easy and no butter etc, it's lovelyOne day I might be more organised...........

I fancy making the banana cake recipe - but don't have a loaf tin. If I was to cook this in a 8inch round cake tin how long would it take in the oven?

The easiest EVER is 2 cups of SR flour, 1 cup of sugar, 2-3 nana's, 4 tbls oil and 2 eggs.
If you have a bread machine then just dump it in there and stick it on dough till smooth. Then stick on Bake for 50 minutes (keep an eye on it as it can vary between machines).
Otherwise stick it in the oven at 180c for same amount of time roughly- again keep an eye as it will depend on your ovenDFW Nerd #025DFW no more! Officially debt free 2017 - now joining the MFW's!

i tried this recipe for the first time tonight, all seemed to go well tho it did have to go in for over an hour altogether, when i tried to take it out the tin it came apart in the middle (ie left bottom half in tin) and was still a wee bit gooey in the middle. i got a fan assisted oven (did change temp slightly to allow for this) and since then i can't seem to even manage a sponge cake! can anyone tell me what i'm doing wrong? wasn't sure if i should line the cake tin with marg etc it was a non stick one!
