    Made these a couple of weeks ago & they were very scrummy & foolproof to make!

    225g self raising flour
    100g butter
    85g castor sugar
    2 medium eggs, lightly beaten
    1 tsp baking powder
    1 tsp ground cinnamon
    170ml milk
    a pinch of salt
    grated zest of 1 lemon
    2 bananas


    Heat oven to 200°C or Gas Mark 6. Grease 12 muffin tins with butter or place 12 muffin cake cases in a tin.
    Melt the butter and leave to cool.

    Sieve the flour, baking powder, cinnamon and salt into a large bowl. Stir in the sugar and lemon zest.

    Mash the banana with a fork and add to the flour. Lightly beat the melted butter and milk together and add to the flour.

    Add the eggs and stir until just mixed, do not over beat.

    Divide the mixture between the tins or cases.

    Bake in the centre of the oven for 25 minutes, leave in the tins for 5 minutes then place on a wire rack to cool.

    I made these a couple of days ago - was a bit disappointed when we had one on the night (made them about 6ish - ate about 8ish) still a bit gooey. But they had to be eaten so had 1 the next day - OMG!!! how scrummy were they then?! Yum yum - will be making these again - but leaving them overnight before eating:T

    I have lots of bananas that need using and thought I know with the kids being on easter holidays we could use them up;)

    so does anyone have a good banana muffin recipe? I have bare minium in the cupboard, plain flour, self raising flour, eggs, sugar ect

    Sorry if I have put this in the wrong place, but seeing as it's to save and not waste thought old style haha

    (just can;t find my cook book??)

    Banana cake

    4oz marg
    8oz sr flour
    60z soft brown sugar
    1lb very ripe bananas
    2 eggs
    1oz raisins - optional

    rub marg into flour until crumbly add sugar and raisins (if using raisins) add chopped bananas and beaten eggs mix well. grease a 2lb loaf tin and bake for 1hr 2o mins gas mark 4 /180 or 370
    enjoy:D

  • Hi All,

    I wonder if somebody could possibly help me with this one. I bought something from the Early Learning Centre last week and was given a copy of the free magazine, containing a recipie for Banana Bread.

    I made the bread and decided ( before anybody else had tried it :rolleyes: ) that it was too dry and threw the recipie out. Low and behold everybody else loved it and now I have a few over ripe banana's to use up my DH has asked me to make another one. I can't get in to the shop to get another copy and the ones I've looked at online don't seem to have the same ingredients or techiniques so may turn out slightly differently.

    Does anybody happen to have a copy lying around that could kindly post the recipie for me.:o

    I would be very grateful.

    Dont know about the ELC one but I have a really easy Banana and Sultana teabread recipe from a Good Housekeeping Tate and Lyle Kids cook book, uses 2 large or 3 medium bananas if that would help?

    Can't help with the ELC recipe, but here's my recipe, which makes lovely moist banana bread.... Hope it helps.

    Banana bread
    125g butter
    250 g caster sugar
    2 eggs
    5ml vanilla essence
    30ml plain yoghurt
    6 ripe bananas
    250g cake flour
    5ml bicarbonate of soda
    1.5ml salt

    Preheat oven to 180 Celcius/350 Fahrenheit
    cream butter and caster sugar until light and fluffy
    beat eggs and add, together with vanilla essence and yoghurt, to butter mixture. Mix well.
    Mash bananas and mix well with butter mixture.
    Sift flour, bicarb, and salt twice, and fold in butter and banana mixture.
    Line a bread pan properly and bake for about an hour to 80 minutes. Test after an hour with a knife (it should come out clean).
    Turn out of bread pan and let it cool down properly.
    3.924kWp (12X327Wp SunPower). SolarEdge SE3500 inverter.
    Surrey/SE. 30 degree roof pitch, chimney shading from mid afternoon.

    ELC recipe for banana bread
    450g ripe bananas ( about 4 )
    250g self raising flour
    1 tsp baking powder
    125g soft unsalted butter,plus extra for greasing
    3 large eggs,lightly beaten
    100g caster sugar
    icing sugar,for dusting.

    Preheat oven to 180c/350f/gas mark 4.grease the sides and use baking paper to line the base of a 900g loaf tin.
    Mash the bananas in a bowl with a fork until almost smooth.
    Sift the flour and baking powder into another mixing bowl and add the butter.Rub the butter into the flour using your fingertips until the mixture looks like breadcrumbs .
    Add the beaten eggs,caster sugar and bananas and stir together using a wooden spoon.Pour the cake mixture into the loaf tin.Level the top of the cake and bake for 50-60 minutes until risen and golden.
    Leave the cake to cool in the tin for 10 minutes then turn out on to a cooling rack.when the cake is cool dust with sieved icing sugar .

    Knew I had kept but have not tried it yet .
