This happened to me first time too! I cooked it for ages which worked though the outside was a bit crispy. I now reduce the banana content so it is more spongey less solid banana0

Hi there, another one it's happened to! I've used the same recipe as floyd a few times now (it was in Martins's thrifty book) but the time given was 45 mins at Gas 4. No way! Takes about 1 hour 10 mins and I turn it down a bit as well once it's been on about 60 mins and starts to go very brown at the edges. I do mine in a 2lb tin and keep testing it till there are no crumbs on the skewer.
PS, it's not stupid to feel proud- I felt exactly the same recently when I made it!
(PS If it's too late to cook it a bit more, I had exactly the same problem the first time I cooked it so I sliced it up & toasted it whenever I wanted a slice - it was delicious. Not sure if this would be OK food safety wise, but we liked it). Maybe microwave it & add icecream/custard/something creamy for a pudding?0 -
My old man made this one yesterday, it didn't take as long, and he added bashed about walnuts and almonds to it, and it was delish. We usually make Trhiftlady's banana muffins, but only had a wee drop of marg and no oil in, so did a google and came up with this, which was fab. He did the same though, took it out, changed his mind and gave it another couple of minutes. Very very good!

This is the recipe that I use:
MRS BEETON'S BANANA AND WALNUT BREAD
fat for greasing
3 ripe bananas
2ozs walnuts chopped (I use chopped mixed nuts from Asda)
7ozs self-raising flour (I use SmartPrice)
1tsp baking powder
1/4 tsp bicarbonate of soda
4ozs caster sugar
3ozs soft margarine
grated rind of half a lemon
2 eggs
2ozs raisins (or sultanas)
Greast and line a 2lb loaf tin and pre-heat oven to 180C/350F/Gas4.
Mash the bananas.
Mix all the ingredients in a large bowl.
Beat for about 3 minutes by hand using a wooden spoon OR for 2 minutes in an electric mixer, until smooth.
Put the mixture into the prepared loaf tin.
Bake for 1hr 10mins, or until firm to the touch. Test with a skewer.
If it's getting too brown, cover with a piece of folded greaseproof paper and lower the temperature slightly.
Cool on a wire rack.
I think you could probably leave out the walnuts if not wanted.

I have a banana bread recipe that is inclined to get quite brown before it is cooked in the middle. I have found that covering the tin with foil when it starts to look too brown helps it to cook in the middle without burning.0

Is it not very sweet then? What about drizzling it with a simple icing to add sweetness, then having it with either custard or warm with ice cream or with sweetened fresh cream? I have made various banana loaves/ bread and can say this is absolutely the best http://www.nibblous.com/recipe/825 I don't turn the oven temperature down but do it all on about 160 C in a fan oven - we add chopped up dark chocolate, but comments say that nuts are good too. It really is yummy.0

i made this recipe today however i got a bit distracted and forgot the sugar any ideas?
lol i once made a banana n walnut loaf and forgot to put hte bananas in :eek::D
only realised when i was telling my friend that it had walnuts in it and was that ok. had to run to the kitchen, take the loaf tin out of the oven, quickly mash hte nanas up and mix it in then back into the oven. end result was yummy!!:T0 -

I'm still looking for an old recipe I used to have that someone gave me out of a Bero book, years and years ago. I'm going back to the 1960's and it was an old recipe then. I've moved house since they gave it to me and lost it.
It used just one ripe banana, had no raisins/currants or anything in. You put the ingredients in a liquidiser, all together and whizzed it up, then it went into a 1lb loaf tin. It was decorated with lemon icing.
I'd love to get the recipe again, just wondered if anyone on here still had it?
