Thanks Everybody, Mother Noah your a star I knew somebody on here would have a copy. It is really nice but it's more bread like than cake like and I guess it was cake I was expecting but everyone else expected bread. I will be gining some of the other recipies a try too they all look delicious and I think some of them may be more moist.

I have a really lazy way of making a very moist banana cake.
6 oz sr flour
6 oz stork or soft butter
6 oz castor sugar
3 eggs
3 very ripe bananas
handful raisins or sultanas
bung all the ingredients in a mixing bowl and mix with electric hand mixer until sloppy. I sometimes put in muffin cases for lunchboxes or a lined cake tin.
Bake at 190c until cooked. (Golden brown & springy or do the scewer test)
About 20 mins for muffins or 40 for large cake

I have done a search on the forum and looked through a few pages but couldnt see what I was looking for.
I have a few over ripe blackened bananas and obviously because I dont want to bin them Ive remembered how good my mums banana cake was and I want to make one.
But from looking through the few recipe books I have I can only find recipes for banana bread or banana cake with dried fruit in or icing on the top.
Does anyone know the difference and any ideas where Ill find a foolproof banana cake recipe with out dried fruit in?

Here's my banana bread - and even though I say so myself it is delicious!
3 bananas
100g butter
150g caster sugar
2 large eggs
75g coarsely chopped walnuts (I hate nuts so put choc chips in instead!)
200g self raising flour
half tsp salt
Line 9 inch loaf tin with greasproof paper and brush with some melted butter
Cream butter and sugar - when fluffy beat in eggs. Peel and mash bananas and add with walnuts (or choc chips). Sift flour, add salt and fold in.
Put mixture into loaf tin and bake for an hour at 190 deg c or gas 4. When ready, turn onto wire rack to cool.

Rikki I am sure someone will correct me if I am wrong, but I seem to recall when I was little that my gran told me that if you wrap them in newspaper they will ripen faster.:grouphug:0

If you put bananas in the fridge the starch turns to sugar and they'll soften enough to make banana breadIt's not usually recommended to put bananas in the fridge, btw
