    phunkles - enjoy the bread; that recipe looks delicious :T I'll add this to the exisitng banana bread thread to keep ideas together.



    If you put bananas in the fridge the starch turns to sugar and they'll soften enough to make banana bread ;) It's not usually recommended to put bananas in the fridge, btw :D

    we have made these today, I got 28 cup cake size cakes out of this amount:cool: the children have had two and want more lol!!

    I worked them out to be 80 cal each lol!! without the nuts/choc chips though;)

  • Hi, i found a banana bread recipe on here, one where you bake it for 60mins... anyway, easy recipe, but although it is nicely brownedon the outisde, the inside seems mushy??? and a bit wet still?
    this is the first time i've made it and jsut wondering if it is meant to be like this, rather than sponge like?

    on a plus note, it does taste really good!

    sorry if this is a really stupid question!
  • how mushy was it? if the skewer/knife that you use to check it comes out clean then its ready if not back into the oven and if you think its getting too brown turn the heat down.

    presuming you have it out of hte oven and you are saying its good so its ok! could always serve it up with custard etc but usually you find it firms up a bit so maybe thats still to happen with yours?

    Ooh, I had this problem with my first loaf of banana bread. I would put it back in the oven for another 10 minutes or so. Don't worry about the brown outside - it's not like normal bread, just because it is brown doesn't mean it will burn, I think it's the sugar.

    Best thing to do nexty time is stick a knife into the middle and if it comes out clean then it is ready.

    If it was this one and you made it in one tin (2lb loaf as opposed to 2 x 1lb loaves) it takes 1 hr 15 mins to cook

    3 very ripe bananas (almost walking) or use defrosted frozen bananas!
    pinch of salt
    6oz melted butter
    1 teaspoon bicarb of soda dissolved in 1 tablespoon water
    6 oz caster sugar
    1 egg
    9 - 10 oz plain flour
  • thank you for your really quick replies. i had been sticking a skewer in, and it kept coming out wet and dirty, but i had presumed it would burn if ii left it any longer. next time i will turn it down and leave it in. it was the full fat one.

    partner and child will enjoy it tomorrow with custard, i will abstain as on a diet, tonight's taste was necessary to make sure it was edible!!! that's what i'm telling myself!

  • floyd, was a similar recipe to yours,but not the same. will try yours next time. Thank you for opsting the recipe. they were very ripe banana's, am very proud of myself as i would previously have put them in the bin, which seems so stupid now, as i always have the rest of the ingredients in!!
  • i used to do that because i cant stand the feel of over ripe bananas, makes me feel ill (stems back to my second pregnancy/morning sickness) .
