The OP has no freezer space.

I guess you'll just have to eat mashed carrots all week instead of potatoes!
If you bake, that will help some of it last longer. Not just carrot cake - there are lots of "healthy" recipes that incorporate pur!ed veg into the mix.
You could try carrot chutney but I think I would just give them away/feed animals with them. After all, it was less than £2, you got what you wanted out of them, and it's not waste if someone uses them, right?0 -
My first thought was also some sort of carrot cake/bran muffins etc, which you can then donate to friends and family - currying favour for the future!
You could also put them on freecycle or ask friends/family if they want some. I am sure you can find a handful of people who could each throw a batch into a meal at some point over the next few days or freeze a kilo or so. If you know any vegetarians, they might know of a creative way to use up a load - and may even invite you over to help eat it!
Any you have left in your fridge by the end of the week should probably just go in your compost, assuming you have a compost heap. If not, you can just dig them in around plants and they will do the same job as compost, just a bit slower.Trust me - I'm NOT a doctor!0 -
No-one local with chickens? They like that sort of stuff. If not, mash some up with potato mash, make some carrot and coriander soup, eat a few plain boiled, chuck some in the spag bolg next week and put the rest in the compost bit?Val.0
