    If you have lots of carrots you could try making carrot jam. I'll get round to giving it a go one of these days....

    Hi

    If you keep them somewhere cool and just dry they will last several weeks. It is important not to keep them in plastic (they sweat and rot quickly) or in direct sun light.

    Carrot muffins?
    Curry (with peas)?
    Slaw - nice with poppy seeds?

    Another vote for carrot/swede mash. Unfortunately I don't do it the healthy way - I add a dollop of butter and then either a touch of ketchup or orange juice to bring out the sweetness of the carrots. Sometimes I have frozen the mash and then defrosted and microwaved it to use as a quick veg dish for a roast
