Carrot'n'Orange Cake
225g finely grated carrot
200g Demerara sugar
150g butter
2 eggs
200g SR flour
3 teasp baking powder
2 teasp cinnamon
1 teasp mixed spice
1/2 teasp nutmeg
175g sultanas or raisins
zest and juice of 1 orange
Grease and line a 22cm cake tin, pre-heat oven to 180 C.
Put butter in a large mixing bowl and melt in the microwave.
Beat in sugar, orange zest, orange juice, grated carrot and eggs.
Mix in spices.
Coat sultanas or raisins with a little of the flour (this stops them all sinking to the bottom of the cake) and mix in.
Mix in baking powder and all the rest of the flour.
Put mixture into cake tin, and bake at 180 C for an hour.
Allow to cool in tin for at least 5 mins before turning out.If your dog thinks you're the best, don't seek a second opinion.;)0 -

I have been given a huge bag of carrots from a man down the road who has an allotment.
I also have a bag that I bought earlier on in the week..so I have a huge surplus of carrots, very little space in my freezer and 3 hungry tummies to feed.
Could you share your ideas please. The only thing that none of us like is carrot soup.

First off you could add them to whatever you're already cooking so if you're making a bolognese for example, then chop the carrot finely and add at the same time as the onion. This works with most dishes where you need to sweat an onion off to begin with.
I posted this recipe for courgette fritters. It would be easy to use carrots instead. As long as they're grated so they cook quickly they'll be OK. http://forums.moneysavingexpert.com/showpost.php?p=66316005&postcount=292
Other ideas :
