    My friend is borrowing an allotment from another friend for a year whilst they have gone to a year long trip to Australia.

    My friend has grown so many carrots and has give me 1kg and has passed on 6kg of carrots overall.

    I live alone and don't do baking or making chutney as I don't have the space for the equipment.

    Any ideas? I like all cuisines so if that makes that easier for you guys.
  • I just made a big batch of roasted carrot soup from about 700g carrots. Freezes nicely, could be made in higher volumes. I loosely followed a bbc good food recipe. Maybe make some stock if you have other veggies around? Make coleslaws (I like coleslaw dressed in vinegar, soy sauce, chilli, garlic and honey), carrot 'chips', vegetable crisps, throw into curries....

    Make a big batch of carrot and corriander soup or carrot and lentil doup,

    Cut into sticks and eat with humous or salsa

    Grated in salad

    Mixed grated carrot and grated cheese with a little bit of mayo, salt and pepper for a sandwich filling.

    Smashed carrots as a side dish you cut the carrots into slices, add 2 tablespoons of olive oil and enough water to cover, bring to the boil and then simmer till most of the water is gone, drain then lightly mash so that there is still texture add loads of black pepper and a little touch of salt.

    Grate finely and add to other dishes to bulk it out, e.g. bolognese and similar. It absorbs all the flavour, especially if you slow-cook it, and saves you calories as well as money because your meals stretch further with less meat (or veggie alternative)
