    Box, sand layer in the base, then alternate layers of carrots and sand. Sand layer on top.

    As cool a place as you can find and use your glut over time.

    I've been out in the garden this morning digging carrots up. there are plenty of them but there all tiny and stubby. All i could think was this afternoon washing them to make soup.

    Thanks shammyjack i've just read that link, i'll see what i've got when they're all cleaned up and perhaps have a go at wine instead.

    Ugly Carrots .........................


    You could make a batch of soup and bung it in the freezer, that way nobody would be aware of the shame of having Ugly Carrots!!

    You can dice up some and freeze ready for soup and casseroles over the winter. It's so easy to just reach into the freezer and add a handful.

    I havn't got recipes to hand but trying searching for

    Carrot friters (simular to courgette fritters)
    Carrot cake
    Carrot loaf (a more savory option)
    Carrot and coriander soup

    Otherwise these are some dishes you can use carrots in

    Curry, carrots, other veg, red lentils and stock
    Stir-fry, add grated carrots to your usual
    Cous-cous, mix with roasted carrots and paprika etc.
  • Winter Sausage Stew. Fry 8 sausages until brown. Drain off most of the fat. Peel and thinly slice enough carrots for 4 people and fry for 2 mins. Add 1/2 pint water and tin of tomatoes and simmer with lid on saucepan for 30 minutes. Add diced potatoes (enough for 4) in small pieces and simmer for 30 more minutes until soft. Season to taste. Serve with peas. Cheap and cheerful!

    Carrot Halwa: it's an Indian pudding. Works for me and might work for others if you don't mention the word carrot and pudding in the same sentence :D

    Lol, I love ugly carrots, they're always my first purchase at the farmers market, no perfect veg for me :)
