    Make super diet salad;
    probably about 1/2 a bag of carrots grated, chopped red onion, juice of 2 lemons, seeds from inside 12 cardemom pods, an inch of grated ginger, 1 chopped red chilli, couple of cloves of garlic.
    Its the nicest salad ever, I have it every day ;-)

    Carrot cake, spicy carrot soup/carrot and coriander soup, grate into bolognese, coleslaw :)

    If you want to try something a bit exotic - try this.

    We used to have it in India and Pakistan hot with evaporated milk during winter. My kids would look forward to that time of year, for that reason, and even now they are teens they still ask me to make it. Funny now when I smell cardamon it take me back there.

    I second this idea. It is GORGEOUS. They serve it at one of our local restaurants and it's always been a real favourite of mine. Might have to make some myself ;)

    You can roast them in batons...little bit of olive oil and sea salt, roast on a shallow baking tray in a medium/hot oven till browning at the edges. They caramelize at the edges and get very sweet. Works for parsnips too.

    Definitely soup. Make this a lot, except use coconut milk, and double the spices. A favourite.


    Otherwise, carrot juice, biscuits, cakes, bread.
