    3 or 4 average leeks, bag of carrots, cover with veg or chicken stock and cook. blitz into the most yummy carrot soup.

  • Hi all, I'm hoping everyone can help me with my rediculous amount of carrots...I accidently ordered 6 bags instead of 6 on my tesco delivery and the thought of wasting them is just terrible! I've seen so many clever ideas on here so hopefully someone can help!

    I've already gone with the usual carrot cake and carrot soup (though bit concerned with making soup as my blender packed in a few weeks ago, can I just mash it up!?) as well as grating them into sauces and having them chopped up with lunch but I was wondering if anyone had any other ideas, maybe using carrots as the main part of the meal? I haven't found any recipes where it is anything other than an accompaniment.

    Also should I cook them before freezing or just stick them straight in?

    I have a feeling I am going to be very sick of them soon!

    Carrots roast beautifully! you could do just roasted carrots as an accompaniment to a meal instead of mixed roast veg or roast potatoes. I like grated carrot with salad, and you can blanch and freeze them you know! just peel them and slice or julienne them then drop into boiling water for a minute and drain them and run cold water over them. then bag and freeze.
    6 bags of carrots IS a lot though - I think I would struggle with ideas for all that too. wonder if you could preserve them somehow? other than freezing I mean............anyone made carrot and ????? jam?
    or salting? I have preserved runner beans by the salting method and it keeps them beautifully crisp and fresh tasting - but compared to freezing it is more expensive as you need a very large jar and tons of salt!

    Can you take them back?

    Otherwise simple carrot and potato bake with cheesy/mustardy white sauce is yummy :)

  • I would personally grate them and freeze (raw) then add to fishcakes, stews, soups, casseroles, pies etc as and when needed.

    Especially when you've already done loads using them up already. You could always leave a bag out to use just now I find carrots last ages anyway.

    Don't forget that if you keep them in the fridge, they'll last ages. Open the plastic bags, cut off any damp bits of stalk and make sure they're thoroughly dry all over.

    One of the best dishes you can make is Indian Gajar Halwa (a dessert made from carrots and not a lot else but keeps really well in the fridge), you'll find that your mountains of grated carrots shrinks to nothing in no time. Don't let the clarifiied butter put you off - I just dry-fry the carrots and get a good result.

    Hi.

    I couldn't find a separate carrot thread on the recipe indexes so please link if there is one.

    DD1 and bf are going back to work in New Zealand in Ohakune which is the carrot capital of the country. They'll be on a tight budget and of course carrots are very plentiful and cheap. Bearing in mind that it will be winter there so hot and hearty will be good as well as all the lovely carrot cake variations, can anyone suggest some tasty dishes please?
