How about adding carrots to a sweet potato mash?
Vegetable soup, which can then be frozen?
Try boiling them in some orange juice instead of water (cheap orange obviously!!).......I had this at a hotel once, and I have never tasted carrots so nice since!0 -

Definately carrot, potato and lentil soup. Dice carrot & potato and fry for a few minutes in a little oil with some sliced onion. Stir in rinsed red lentils and add stock and simmer for about 25 to 30 mins. Blitz until smoothish and add a little more stock or boiling water if its too thick. Yummy....I'm actually making some tonight to have for lunch tomorrow. HTH0

I'd use the carrots in a soup recipe I got from an Asda magazine. I don't use the pesto and I blend it until smooth rather than leave it chunky.
1 onion, diced
1 tablespoon olive oil
400g (13oz) cooked carrots
25g (1oz) plain flour
500ml stock – chicken/turkey/vegetable
2 x 410g tin butter beans
4 teaspoons pesto
Gently cook the diced onion with the olive oil for four minutes. Add the carrots and flour and mix in to absorb the excess oil.
Remove from the heat and slowly pour in the stock stirring frequently, then return to the heat and bring to a simmer for five minutes. Add the drained butter beans and simmer for a further five minutes.
Top each bowl of soup with a teaspoon of pesto.Grocery challenge - Nov: £52/£100

I add grated carrot to spag bol - just one - great way to get OH and DS to eat veg!I have had many Light Bulb Moments. The trouble is someone keeps turning the bulb off

Has anyone any clever ideas on what to do with a whole load of carrots (they were on offer and both OH and I bought some! Doh!!
I thought about making some soup or something similar but the obvious one is carrot & corriander soup and I HATE corriander.
