I love carrot and swede mash. Just add a bit of black pepper and some butter. Lovely.

oops- ordered 2 bags of carrots in error.:eek: I have already got a pan of soup simmering. Any more ideas? Perhaps a cake recipe. Also 3 overipe bananas in fruit bowl. Could I combine them ? I am sure one of you old stylers will come to my rescue.0

I've got a recipe for banana muffins and/or banana brownies (made them last week and they are very tasty!) if that's of any use?
You could always cut up the carrots as though you were going to have them with a meal, blanch them in boiling water for a minute or two and then freeze them?0 -

There is a thread entitled oodles of carrots on what to do with a glut of carrots which should have plenty of ideas and one called banana glut which has loads of recipes too.0

Banana Brownies
Ingredients
100g/4oz of butter, melted
25g/1 oz cocoa powder, sifted
175g/6oz soft brown sugar
2 medium eggs, beaten
few drops of vanilla extract
50g/2 oz self raising flour
1 large banana peeled and chopped finely
25g/1oz shelled walnuts, roughly chopped (I leave these out when I make them!)
Method
Preheat oven to 190ºC/375ºF/Gas Mark 5. Grease and line a 18cm/7 inch square tin
Mix the butter and cocoa powder together well. In a bowl, whisk together the sugar, eggs and vanilla extract until pale, creamy and thick in volume
Beat in the cocoa mixture, then fold in the remaining ingredients
Spoon into the prepared tin and smooth the surface. Bake for 35 - 40 minutes or until well risen and firm to the touch
Leave to cool in the tin before removing. Peel away the paper and then dust with cocoa powder and cut into pieces.
