  • Hi All , Just a quick question today my mum brought me up two bags of carrots that she was given by my aunite because she knows i make soup etc. Anyway i have a Kg of carrots now and no idea what to do with them. I was thinking of peelign and slicing them then chucking them in the freezer - do i need to part cook them first??And what else can i do with all these carrots - dont get me wrong they will get eaten and it seems a waste to waste them but i need a few ideas please.

  • You can slice them and then blanch them first, by dropping them into boiling water for no more then a minute, then drain the water off.
    Let them cool down completely and then freeze them in plastic freezer bags.

    i remember when i was at school making carrot wine that was nice.. cant remember how i made it though but is another idea for you....

    Hiya...

    I get 22lb of carrots delivered a month. What I do is (rope in a few friends, firstly!) top and tail and peel and grate them with my processor. I then bag them up into 500g and freeze them. No pre-cooking or anything. I can then use them for soup or, my personal favourite, carrot cake.

    So what can I do with all the excess, now that I've used half a dozen for Sunday lunch??
