    I have searched for a thread. Found a muffin and cake recipe.

    Got a huge bag of carrots for 14p yesterday but need eating up fast.

    What else can I do with them? Going to have a carrot cooking day today.

    I don't have any pet rabbits:D

    make caarrot + ginger soup!

    saute in a bit of oil the peeled chopped carrots with 2 stalks chopped celery, 1 chopped onion, 1" piece chopped up ginger + a little salt + pepper until soft. Add water to cover + simmer for 40 minutes, then blitz until smooth. add more S+P to taste. Can also add some OJ in instead of some of the water.

    Does anyone remember that episode of The District Nurse with Nerys (sp?) Hughes where there was a family that only eat carrots, and they turned yellow? lol

    I peel them, chop them, boil them for 10 mins, portion them up and then stick them in the freezer for another day - don't take as long to cook then or you can just bung them straight from frozen into shepherds pie or whatever ;)

    Carrot juice is lovely - but you need a juicer, obviously.

    When I have a glut, I use them up by pureeing them and add them to anything with tomatoes in (soup, pasta sauce, curry)

    Cheers guys - I have made soup, carrot cake, juiced some and a carrot salad. Shall roast some when I do a BBQ or a roast.

    Hi,

    my friend turned yellowish through eating too many and another did after taking some tanning pills.....but I digress. i am making today something I had abroad- cooked carrots cold in a garlic and oil dressing . yummy....a good glut to have methinks,

  • Any ideas - I bought a load for our guinea pigs and now I have learnt that they can't have too many I'm stuck on what to do.
