    Hi all - I have about 6 carrots which have all gone soft, are these still safe to use and if so what can I do with them other than carrot soup?

    They'll be fine to eat, but not as fresh ;) I'll add this to the exisitng thread on carrots to give you loads more ideas :D

    Hi all,

    I'm checking out this board more and more- sorry I haven't ventured over here earlier- so much good advice here!

    Ok- so I have 1kgish of carrots and they MUST be used. How can I use them? Pretty stuck for ideas when it comes to carrots! Usually just boil or roast or carrot sticks.

    Anyone got some carrot-shaped pearls of wisdom? Have all the ususla store cupboard items...

    We have an allotment and very often have a glut of carrots, I just chop, blanch and freeze them in meal size containers. Carrot soup is very nice and freezes well.

    I've been Money Tipped!
    My favourite way to eat carrots is sliced, steamed and erved with capers, dill and a little creme fraiche/sour cream/yoghurt. I'm alo a big fan of juices with lots of carrot in them.

    There is also carrot cake. :) (lol, cross posted with previous poster!)

    Thanks for the replies! I am NOT ALLOWED CAKE!!! But thanks for the suggestion! I am veering towards making a vat of a casserole type thing- carrots, tinned toms, tom puree, onions, peppers, aduki-type beans, salt+pepper, garlic and herbs?

    Could I freeze that?
