i always keep my veg in my fridge and i often find carrots last 3 weeks at least before they even started to go shrivelled, so you may not need to use them all straight away.0

I've just boiled and mashed enough carrots (with a bit of swede mixed in) for 24 portions - now sitting on the worktop cooling down before being put in the freezer.
Tomorrow, i'll start on preparing more for soup and even after having some for veg tomorrow lunchtime, I'll still have some over.....looks like orange hands for a bit longer0 -
If you've got a garden, no room in your freezer and don't want to waste them, you can always put them in a shallow trench, cover them up with earth and just pull a few out at a time as you need them. That will keep them fresh and stop them drying out. Alternatively put them in a bucket or bowl in a shed or garage and cover with slightly moist peat.0
