I've searched for carrots and cannot find a thread for them so hopefully I am not repeating anything.
I have half a dozen carrots that are beginning to look limpy, dry etc. They are ready for bin but really don't want to put them in there. I don't fancy eating them as 'carrots' and don't expect the kids too either.
Carrot muffins are top of the list but has anyone any more ideas of what I can do?

We have a long thread on carrots, so I'll merge this so that you'll have lots of ideas.

Thanks for showing me the correct thread, sorry to add to your work load P Penguin. I've read up on searching.
We've just tucked in to spiced carrot and lentil soup but kept the spice to a minimum as the children were having it too. It was really delicious. I'm hopeless at making a nice soup so i'm pleased I've had a success.
We also had homemade flatbread to dip into which was really good... like naan bread into curry :rotfl:

Ok so i;ve winged it! threw some garlic and chilli olive oil on and have chucked them in the oven with fingers crossed. Im so late to be eating but to heck with convention, i want my roast dinner!A little nonsense now and then is relished by the wisest men :cool:

If I roast carrots I usually roast parsnips alongside them. Five minutes(ish) before they're ready I give them both a coat with some honey and wholegrain mustard. I did this today but got distracted and turned my oven off somewhere along the line

In this house, it's when they show a little browning but anywhere between the slight browning and a distinct shade of black is good. Or, my roast potatoes usually are in for 45 minutes, i put par boiled carrots and raw parsnips in maybe 20-25 mins later (just as my pots for the mash are coming to the boil). I coat the carrots/parsnips just as I take my roast pots out.
ETA if you coated them in a flavoured oil, they can be in for longer than the 5 mins I give honey coated things though. Honey burns really quick"Who’s that tripping over my bridge?" roared the Troll.
