DD1 and bf are going back to work in New Zealand in Ohakune which is the carrot capital of the country. They'll be on a tight budget and of course carrots are very plentiful and cheap. Bearing in mind that it will be winter there so hot and hearty will be good as well as all the lovely carrot cake variations, can anyone suggest some tasty dishes please?

Hi, I have a really good recipe for carrot and coriander soup, if you'd like it. Also a nice one for roast parsnip and parmesan soup. If I can prise my carrots away from Jasper-dog, that is! He ADORES raw carrots!! Let me know if you'd like the recipes.0 -
i've just made a spicy carrot and lentil soup because my carrots are on the turn, basicially it was just carrots, red lentils and a potatoe, with salt pepper, paprika, chilli flakes and gram masala it smells yummyDEC GC £463.67/£450

just been given a bag of carrots by MIL, what can I make? No other veg in house at the moment, I dont eat meat, other ingredients in cupboard are tinned tomato, rice, pasta, spices, quorn sausage er er not much else! Any recipe ideas, can pop to shops tomorrow for ingredients0

First you can make a very carroty sort-of coleslaw, with or without cabbage. Grate carrot, add any of (sliced or grated) radish, onion, spring onion, courgette, peppers, celeriac, fennel, raw beetroot...you get the idea. I then add mustardy French dressing so it only need a little bit of mayo (or none at all).
If you eat/buy eggs and cheese there are quite a few options. I often add a big grated carrot to quiche (with or without the pastry).
You could make mash to go with the sausages, instead of potato. Or fritters - grate carrot, add a beaten egg, maybe some flour, herbs/spices and fry.
Then this recipe (American & imperial measures):
Golden cheese & rice
1/2 cup /3 1/2oz rice
3 cups/1 1/2 lb raw carrot, grated
1/2lb grated cheese
2 eggs, beaten
Salt & pepper
2 tbspns minced onion
1/2 cup/4 fl oz milk
Cook rice, adding carrot for last 3 or 4 mins. Drain then combine with rest of ingredients but reserving half the cheese. Put in greased ovenproof dish, sprinkle rest of cheese on top. Bake at 350f/160c for 50 mins.0 -
aside from the obvious carrot and coriander soup - theres carrot cake, Or, use them raw then grated in salads (coleslaw is delish with lots of carrot). I, personally, love carrots cooked with potato then mashed with butter and pepper. the kids call it 'orange mash'! carrots are also good in stir frys, you can roast them in olive oil and salt and pepper as a side dish. they also go well with other veg roasted. or you can just peel them, chop them into little sticks and eat them! great when you have the munchies!0
