My top tip for egg mayo sandwiches is to make each sandwich with a single slice of bread folded in half rather than having a top and a bottom and cutting in half. That way the back of the sandwich is sealed and prevents the eggy mix squeezing out the back when you bit into it.
Also using soy sauce instead of salt is delicious (but makes them a funny coulour).
I always have tomato in it as tomato and eggs go really well and cucumber for crunch but a touch of spring or finely chopped regular onion is fab.
The other alternative is egg salad which has to be made with salad cream in my book, again, tomato, cucumber and fold in half.
Have some left over egg mayo from yesterday so off to make some now!0 -

Hello, can you help me with an easy way to make egg mayo sandwiches? I don't want to make the mayo but I am guessing there is a bit more to it than boiled egg and mayo? Sorry I sound a bit clueless, I haven't eaten egg's in years and I am just getting back into them!0

I hard boil my eggs, then while still hot, mash them up and add a bit of butter. Salt and pepper, then mayo. That's it! I think it's better to let the eggs go cold before you mix in the mayo. Well, apart from chopped boiled eggs and some good quality mayo one variation I find tasty is some very finely chopped onion and/or celery added to it. It gives a really lovely flavour and a good, crunchy texture.0
