    Hi purplegirluk1,

    I mash hard boiled eggs with a fork, add a good dollop of mayo a little salt, lots of pepper and sometimes if I'm feeling decadent some finely chopped onion or cress.

  • I add some chopped up chives and maybe some english mustard. And you definitely need salt and pepper.

    Red onion makes it especially nice. And lots of black pepper.

    Depending on how i feel i usually add dijon mustard or paprika as well as the eggs, salt, pepper and mayo

    i love egg mayo. i find i like to make sure i don't over boil them as then u get the black rings around the yoke. i love to then add hellmans mayo ( taste so much better than any other brand ) and a good twist of black pepper. so yummy.

    Just to report back, I did a bit of salt and pepper and a dash of wholemeal mustard and it was delish, yum yum. I am impressed at how easy it was, defo need a bit of cress next time. Thank's again :-)

    I was just going to say... I love a dash of wholegrain mustard in mine!

    I also grate mine on the roughest grater. Easy to spread then.

    I did have egg mayo once in a cafe, where the guy actually scrambled the eggs in the microwave and mixed them with mayo.... so a great quick way to do egg mayo if you don't have the time/equipment to wait for eggs to boil.

    My top tip for any sandwich filler that is moist is to spoon it out onto the bread, then use the back of the spoon to spread it about. I use a teaspoon. Much easier than a knife.
